I love Tampa. You can get it fresh and cheap if you buy it in the wet markets. I prefer to use the ones wrapped in paper with leaves but the larger ones that come in nylon is also fine.
The supermarkets are fine too (cooling section) but you will pay a little more.
This simple recipe is quick and easy to prepare. The basic idea is to add sweet and savory sauces to the fried tampa and mix it. I find that tampa tastes best if deep fried. Depending on the size of the pieces, frying for 10 to 15 minutes over medium heat should suffice. I usually use a small pot to dry the tampa. The tampa does not appear to absorb the oil. Strain it properly after frying. Air frying is another option though for some reason, frying in oil has better results.
So this recipe is really simple.
Slice your tampa.
Deep fry in oil for 10 to 15 minutes.
Filter the tampa.
In a bowl, mix a little good soy sauce and a manis summary (my favorite brand is Bengo). Drizzle in a little lime if possible. Garnish with some green herbs.
Sweet, salty, sour, fruity.
I’m sure you can imagine what else you can add to Tampa.
It looks beautiful and tastes great. Suitable as a snack or as a side dish for dinner.
