Sloppy Joe my homemade
* For pressure maintenance


3 kg ground beef
2 small onions cut into cubes
3 small sweet peppers, cut into cubes
2 celery stalks, cut into cubes
4 ground garlic cloves ground
2 cans (15 ounces) tomato sauce
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons chili powder
1 teaspoon dry mustard
1/2 teaspoon red pepper flake (Optional)
Worcestershire sauce, hot sauce, salt and pepper, to taste

Arrival instructions:

  • In a large skillet or saucepan, heat a little oil over medium-high heat. Add onion, pepper and celery; Season with salt and pepper. Cook, stirring frequently, for about 2 minutes.
  • Add minced beef to pan or pot. Cook, disassembling meat in a spoon, until the meat is no longer pink, about 5 minutes. * The meat will be cooked during processing, you just want to cook the “pink” from the meat and drain all the fat from the meat before proceeding to the next step.
  • Mix tomato sauce, garlic, ketchup, brown sugar, chili powder, dried mustard and red pepper flakes into a beef mixture in a pan. Cook, stirring occasionally, for about 5 minutes.
  • Season the mixture with any Worcestershire sauce, hot sauce, more salt and pepper, as needed.
  • Prepare jars and pressure vessel
  • Fill each jar with Sloppy Joe mixture up to a 1-inch headroom. Wipe the edges with a damp paper towel with vinegar.
  • Work in a pressure trap depending on your height.
  • Liters 75 minutes / quarts 90 minutes.
