Do you need to smear green beans for this recipe?

Bleaching green beans means cooking it for a short time in boiling water until it is flavorful, soft and bright green. Once they are soft, the beans are cooled in ice water to stop cooking. While whitening is a great way to cook green beans for salads and other dishes, in the case of this simple sautéed recipe, there is no need for whitening.

Instead of bleaching the beans, we streamline the cooking steps. The method is not so different from making our stir-fried zucchini, this sautéed cabbage or this stir-fried bok choy.

How to bouncegreen beans

We like our beans to be light green with some blisters on the outside and tender and tasty in the middle.

Cook the beans with a little oil and salt in a wide pan. Toss the beans every few minutes. We are not looking for completely soft beans at this point, just a few blisters.

Cook green beans in a pan with oil

Pour in a small amount of liquid – like water or spindle – and cover. Cook, covered until the beans are tender (about 2 minutes).

Reveal and then add flavor with ground garlic, butter (plain or vegan butter), and any other spices you like. Toss around for a minute or two, then serve!

You will have to

Stir-fried green beans

1 teaspoon olive oil

1 kilo of green beans, the ends of the stem detached

1/4 teaspoon thin sea salt

1/4 cup water or spindle

Lemon slices, for serving

Optional garlic butter

1 tablespoon butter or vegan butter

3 medium garlic cloves, ground, about 1 tbsp

1/2 teaspoon lemon zest

1/4 teaspoon freshly ground black pepper

directions

    Heat oil in a wide pan over medium-high heat, then add the green beans and 1/4 teaspoon of salt.

    Cook until you start to see some blister spots, about 5 minutes. While they are cooking, continue to toss so that all the beans have a chance to hit the bottom of the pan.

    Pour in the water (or hinge), then cover the pan with a lid or if the pan you are using does not have a lid, tent a little aluminum foil over the pan. Cook, covered, for 2 minutes.

    Expose the pan, lower the heat to medium-low, then continue to cook until all the liquid left in the pan evaporates. Serve or if you are making green beans and garlic butter, mix in the butter, garlic, lemon zest and black pepper. Cook, stirring the garlic around the pan for one minute. to serve.
