A bunch of fresh cookies in the oven just seems to warm the house and fill it with all these baking smells and delicious memories.

Everyone has a special cookie that defines Christmas for them. Although I love to bake all kinds of cookies, this recipe for Almond Chocolate Mint is my newest favorite!

I think chocolate mint cookies made from almond flour will look pretty good on a Thanksgiving or Christmas cookie tray!

Soft and chewy, with the perfect combination of chocolate and mint, these cookies will blow your mind!

Ingredients needed for almond chocolate mint chocolate cookies:

  • Almond flour
  • Cocoa powder
  • Chocolate chips
  • egg
  • Coconut oil
  • Mint extract
  • Optional: melted white chocolate and white scatter

Steps for making almond chocolate mint chocolate cookies:

Step 1: Preheat the oven to 350 degrees F.

Step 2: Melt chocolate chips and coconut oil in a bowl. (I made 30 second intervals in the microwave until I could easily mix everything together).

Step 3: Allow the melted chocolate / coconut oil to cool slightly, then stir in one egg and mint extract.

Step 4: Add almond flour and cocoa powder.

Soft and chewy, with the perfect combination of chocolate and mint, these cookies will blow your mind!

Roll the dough into small balls and place on a ready baking pan. Bake for 9 minutes. Remove and cool completely on a wire rack.

** To create flat cookies, you can click on the cookies before cooking or after cooking.

Once the cookies have cooled, drizzle white chocolate and sprinkle with whites if desired.
