These crispy roasted potatoes are one of the best roasted potatoes you can ever make. Potatoes have never looked more beautiful than this and are as delicious as they look. Thinly sliced potatoes sprinkled with olive oil, parmesan, garlic, bread crumbs and thyme are roasted to golden perfection and served with crispy bacon pieces. There is no doubt that these potatoes are a great addition to Thanksgiving or Christmas or any other occasion at any other time of the year.
This recipe for crispy sliced potatoes is very easy to prepare, does not require much ingredients, is easily adjustable and aesthetically pleasing. Parmesan, garlic and thyme add amazing flavor but feel free to use your favorite herbs or other type of cheese to better suit your taste.

- Provides about 4-6 servings
- 4 pounds (1.8 kg) Golden potatoes, peeled, thinly sliced
- 1 tbsp (14 g) butter, for greasing the pan
- 1/4 cup (60 g) olive oil
- 1/2 cup (50 g) Parmesan cheese
- 3 tbsp (24 g) bread crumbs
- 1 tsp (3 g) Garlic powder
- 1 tbsp Fresh thyme or 1 teaspoon dried thyme
- Salt and freshly ground black pepper
- For serving
- 3.5 ounces (100 g) Bacon, cooked into crispy pieces
- Fresh thyme

Preheat the oven to 375 degrees Celsius (190 degrees Celsius). Grease the bottom and sides of a 9-inch (23 cm) cast iron pan with butter. Set aside.

Use a mandolin, or food processor to slice very thin potatoes.

Transfer the sliced potatoes to a large bowl.

Add olive oil, Parmesan cheese, thyme, garlic, bread crumbs, salt and pepper. Throw in a uniform coating.

Place the potato slices in piles and arrange them in the prepared pan, stacked vertically.

Bake uncovered for 60-70 minutes until the edges and top are crisp and golden and the centers are soft.

Sprinkle with crispy bacon pieces and fresh thyme and serve! have fun!
