In 1980, New York writer Lori Colvin visited Texas for a literary festival at SMU. During her stay there, she ate at a house in Dallas, where she was served creamed spinach with cheese and jelpanius. Fascinated by the dish, Colvin asked for the recipe. She later shared it with her readers in her gourmet magazine column.

In 2006, when food blogs began, Lori Colvin’s two books, Home cooking and More home cooking, Which included many of her magazine stories. . .
