I like to cook something delicious and a little special for breakfast or brunch on Christmas day, usually after we have made clicks under the tree and the kids sit down to play with their toys or games and we have some Christmas music, it just feels so special and the jing pancakes Goddess is like Christmas in every bite.
If you want something a little different from your basic pancake recipe then these Christmas ginger pancakes are light and airy, with a hint of cinnamon and ginger.

What do you eat for breakfast at Christmas?
The only day of the year where you are supposed to indulge in every meal, in addition to getting into some appetizers, glasses of pizzas and chocolates in choice boxes. Pew!
📋 What do we need?
To make these spicy and delicious ginger pancakes, you will need.
* In order for these spices to give these pancakes the ginger-flavored taste I use:
- Ground cinnamon
- Ground nail
- And a pinch of salt
I’m looking forward to whipping up these gingerbread pancakes for Christmas morning. Top with fresh fruit and a drizzle of maple syrup, and served with a hot and steaming cappuccino. Yum !!

👩🍳Professional tip I like to make them in small batches so I have enough space in the mold to make them. You can keep them warm in a low oven while you prepare the rest of the dishes.
Maybe I’ll even go for some edible glitter …
The kids really like them, although I imagine they will be too distracted from the gifts to really focus on breakfast!
Maybe I’ll make them for Christmas dinner instead.

🥞 Ginger pancake recipe
These ginger pancakes are light and mellow, with a hint of cinnamon and the perfect ginger for breakfast or Christmas brunch!
Preparation of the pancake batter
Put the flour, baking powder, baking soda, two sugars, salt, ginger, cinnamon and cloves in a large bowl. Stir together until combined.
Add the egg, vanilla extract, lemon zest and butter, then stir just until combined with a balloon whisk.
After union add in the milk while stirring with the whisk.
Cooking the pancakes
Melt a button of the butter in a large skillet (pan) over medium heat, then carefully brush the butter around so that the pan is thinly coated.
Pour in enough mixture to make 2-3 pancakes (about 60 ml or 1 cup of the mixture per pancake) and cook for 2-3 minutes.
Turn the pancakes over when bubbles form from above and then explode, and the edges start to look firm. Cook from the other side for another 1-2 minutes.
Repeat with the rest of the mixture until all the pancakes are ready (you can keep the pancakes warm in a very low oven while preparing each dish).
Serve the pancakes with butter wallpaper and a drizzle of maple syrup. You can also decorate with mini ginger ginger for cakes, cranberries and a little edible glitter.
