It’s so satisfying to make something delicious from leftovers and this risotto definitely ticks all the right boxes.

Christmas time There will be no Christmas time without leftover turkey, turkey soup or turkey The stock For the rest of the Indian risotto.

I like to get the most out of leftovers! So let’s continue with this creamy risotto.

It’s definitely worth taking the time to make this homemade axis and takes it to a whole new level of deliciousness. Replacement of components

  • You can make this chicken risotto by replacing the turkey with your chicken leftovers Roast chicken meal.
  • You can leave the mushrooms and bacon if you do not like them.
  • If you do not drink wine, you can replace another spindle and another squeeze of lemon juice.

Even if I do not cook on Christmas day, it is known that I buy turkey just so I can make some leftover style meals!

My leftover turkey goes something like this:

  • Day 1 – Christmas Eve: roast turkey And stuffed sandwiches (salted butter and white bread – so naughty !!)
  • Day 2 – Holiday: India Curry
  • Day 3 Lunch: Crispy turkey nachos
  • Day 3 Dinnerr: This is a Turkish risotto with crispy pancetta and mushrooms

So good!

Recipe for leftover Indian risotto

This rich and creamy turkey risotto with mushrooms and pancetta is a great way to take advantage of this mountain of leftover turkey from Christmas or Thanksgiving! It’s gluten free too!

Instructions

  • Add the butter and one teaspoon of the oil to a large pan. Heat until the butter has melted.

  • Add the mushrooms and fry for 4-5 minutes until golden, then remove from the pan and place in a bowl.

  • Add the pancetta to the pan, and fry until golden and crispy then remove from the pan and place in a bowl with the mushrooms.

  • Add the finely chopped onion to the pan and fry for 3-5 minutes until the onion begins to become translucent.

  • Add the garlic, stir and cook for another minute.

  • Then enter the arborio rice, and stir until the oil coats the rice.

  • Add in the wine and stir and cook for a few minutes, stirring constantly, until the wine is almost completely absorbed into the rice.

  • Now add the ladle hinge each time – make sure each ladle is almost completely absorbed before adding the next one. Be sure to mix regularly.

  • After about 15-17 minutes you should have 1 or 2 ladles of hinge. At this point, add in the grated turkey, salt and pepper and stir to combine.

  • Add the remaining stock and cook for another 2-3 minutes to heat the turkey so the stock can be absorbed into the rice.

  • Add in the cooked mushrooms, cooked pancetta, parmesan and lemon juice. Mix everything well then cook for another minute or 2.

  • Serve with a little grated Parmesan, a little black pepper and a few sprigs of thyme.
