This Vegetarian Mexican pizza recipe (aka Pizza Taco) includes refried beans, corn, tomatoes, red pepper, onion and pickled jalapenos. All under a blanket of bubbling cheddar cheese.

If you are a fan of Mexican food, you must have tried Taco Bell’s Mexican pizza. It consists of crispy tortillas layered with beef, beans and cheese.

I was inspired to make Mexican pizza at home and put my own spin on it, including pillowy soft pizza dough and vegetarian toppings. Sometimes, if I’m feeling a little extra, I also add a dash of garlic pizza sauce.

Ingredients you will need

Get all the details on these simple ingredients in the recipe card at the bottom of the post.

  • Pizza dough: In this recipe I used homemade pizza dough, but you can use different pizza bases, including store bought pizza dough, or corn tortillas.
  • Fried black beans: You will need a portion of vegetarian refried beans to spread on the dough instead of marinara sauce. Another thing you can use as a base is enchilada sauce or taco sauce.
  • cheese: You can use any cheese you like, including cheddar cheese, Mexican cheese blend, or mozzarella cheese.
  • vegetables: Use your favorite vegetables in season. I added red pepper, red onion, tomato cubes, corn and pickled jalapenos.
  • Taco seasoning: to season the vegetables. Use your favorite blend for best results.
  • Olive oil: If you are using pizza dough, you will need a few tablespoons of olive oil to grease the baking pan to prevent the dough from sticking.

How to make this vegetarian Mexican recipe

Start by rolling out your dough. Sprinkle a little flour on a clean surface and with the help of a rolling pin roll out the dough from the center to the edges, until you reach the desired thinness (for me it’s ½ centimeter).

Transfer the dough to a greased baking sheet and spread a layer of fresh beans. Add the vegetables, and sprinkle the taco seasoning.

At this point, you can add any other pizza toppings you like such as black olives, salsa and green chiles.

Sprinkle cheese over all the vegetables and bake for 15 minutes.

Top tips

  • Cut the toppings into small pieces. You don’t want to have large chunks of vegetables on your pizza.
  • Roll out the dough thinly to make sure it cooks. When making pizza, you want to make sure the dough is thin enough to cook until the cheese is golden.
  • Season the vegetables well. This recipe is healthier than Taco Bell’s version, especially with so many vegetables and no meat. That is why it is essential to taste it with spices so that it is not bland. I found that taco seasoning works best and if you want to add more heat, use chili powder as well.
  • To make this recipe Taco Bell style, use a tortilla instead of the pizza dough. Be sure to bake the tortilla for 5 minutes on each side, until golden, before adding your favorite toppings. This way you will have a crispy tortilla as a base and it will not be limp.

Common questions

Can I make this recipe vegan?

Yes! You can easily make a vegan Mexican pizza using a vegan cheese like VioLife Cheddar Block.

What is Mexican Taco Bell pizza made of?

It consists of crispy tortillas layered with ground beef, tomato sauce and fried pinto beans.

How do you prevent the pizza from getting soggy?

The only thing I have found that works when it comes to soaked pizza is to spread a thin layer of olive oil on the base of the pizza before adding the toppings. I use a party brush to gently brush the oil without damaging the dough.
