What is a pie?

A pie is a baked dish that is usually made from a pastry dough shell that covers or contains completely a filling of various sweet or savory ingredients. Pies are defined by their crust.

The stuffed pie with the bottom crust has a lined dough in the baking pan, and the filling is placed on the dough but left open.

A top crust pie, also called a shoemaker, contains the filling at the bottom of the pan and is covered with a pastry or other cover before baking.

The double-crust pie has the filling completely closed in the dough shell. Flake pastry is a typical type of pastry used for pie crust, but many things can be used, including baking powder cookies, mashed potatoes and crumbs.

You can use any type of apple like Pink Lady, Grandma Smith, or just red apples. I used red apples with a peel, if you want, or if you do not like the peel, feel free to peel the apples before cutting.

Corn starch helps in making a thick custard sauce. If you do not have corn starch you can replace it with any flavored or tasteless custard powder. You can also try adding arrowroot powder to thicken the custard sauce.
