Yeoneojang is a raw salmon dish prepared in a marinade based on soy sauce. You will love this buttery salmon which is wonderfully salty!

Yeoneojang (연어 장) is a raw salmon dish marinated in a delicate marinade based on soy sauce. Yeoneo (연어) is the Korean word for salmon, and Zhang (장) refers to soy sauce in this case. If you enjoy eating raw fish, like a hoe (회) or sashimi, this is truly a recipe that salmon lovers will fall in love with right away.

Over the last decade or so, salmon has become increasingly available and popular in Korea. The country today is one of the largest buyers of Norwegian salmon in Asia. A few years ago, Korea also became the first country in Asia to successfully produce salmon.

Unsurprisingly, yeoneojang has become very popular in recent years because Koreans love raw seafood marinated in soy sauce like jang (prawns) and saujang (shrimp).

Salmon is an excellent source of protein and high in omega-3 fatty acids. As in the case of consuming all nice seafood, be sure to use only the high-quality and properly treated fresh salmon. Always eat any raw fish at your own risk.

The marinade

I made the marinade very simple here – soy sauce, rice wine and sugar. Sometimes, I toss a small piece of dasima (dried seaweed), peppercorns and / or a few slices of garlic and ginger.

For Zhang, Korean cooks typically use a wide variety of salty aromatic ingredients to eliminate the fishy taste of fine prawns. But, I find it not necessary for salmon. This simple sauce, slightly sweet and salty, perfectly complements the rich and delicious fish!

How to serve yeoneojang

The salmon is ready to eat within 4 to 5 hours, but it will be better the next day and best consumed within two days.

You can simply serve it as a side dish or main course. However, yeoneojang is commonly served on top of rice as a deopbap (a bowl of rice with toppings). Garnish it with thin slices of onion and / or micro green or baby sprouts, but not required. Spread a little marinade over the salmon and rice. The delicious marinade / sauce mixed with the rice.

Remarks

  1. You can also toss a small piece of desima (dried seaweed), peppercorns and / or a few slices of garlic and ginger if you like. Boil a little longer (5 minutes) if you add these ingredients.
  2. Depending on the size of the container, you may have a little more marinade. Keep it in the fridge and use it as a stir-fry sauce or as a dipping sauce.
