what do you need

Ingredients for chicken gnocchi soup, including chicken, celery, carrots, thyme, butter, half & half, spinach, salt, pepper, flour, oil, garlic, onion, chicken soup and potato gnocchi

Ingredient notes

  • chicken- Use diced chicken breast for this recipe because it will retain its shape better while cooking than other chunks. Buy the boneless and skinless chicken.
  • Gnocchi- Be sure to have regular potato gnocchi for this dish as we have a lot of delicious flavors that are added to it. Frozen and thawed, or fresh, it’s okay.
  • Spinach- It is best to go with fresher leaves that are frozen here so that they do not overdo it or put too much water in the soup.
  • Chicken stock- Go for low sodium so you can better control the salt level in the soup by adding it to your liking.

Additions and substitutes

  • Other white meat substitute- You can also use pork or turkey instead of chicken breast. Even dark meat, like chicken thighs, works in a pinch but the texture is a little different.
  • Add other vegetables- If you like your ceramic soups with some mushrooms, broccoli or peppers, you can also add them.
  • Gluten-Free Ingredient Substitute Whether you make it yourself or buy it, you can make this recipe with gluten-free gnocchi and rice flour flour for those who do not have wheat.
  • add Bacon- Cook a little chopped bacon until crispy, then add it to this chicken gnocchi soup for a savory and crunchy addition. Try this crispy bacon recipe.

Recipes tips

  • Cook the chicken in full- Make sure the chicken is completely cooked before adding anything else to the pot. This ensures that it is cooked safely, because it may not be clear later.
  • Cook the flour- Mix the flour in and cook it for a few minutes to kill the bacteria and get rid of the raw flour.
  • Adjust the salt according to the soup- If you use my homemade soup recipe, 1 1/2 teaspoons of salt should suffice. If you use a store, start with 1/2 teaspoon and add more according to your preference.
  • Add the last spinach- Spinach can wither a lot and lose its vibrant color, so add it last so that it will cook just enough for a slight wilting.
