Sometimes I want a lasagna-style dinner, but the thought of the effort and the number of dishes involved scares me.
This is the recipe I turn to in those days!

It’s faster and easier because we:

  • Replace bolognese sauce with chorizo, beans and tomatoes (also with lots of other vegetables).
  • Replacing lasagna sheets with tortillas – means we won’t have to wait for it to cook and soften – it just needs to be warmed.
  • Replace the white / milk / butter-based white sauce with a ridiculously quick alternative – simply mix together in a bowl.

Is it still possible to compare it to a lasagna? Despite the substitutions, this dinner still gives me all the comfort and flavor of a large, bubbly lasagna dish, so I say yes!

📋 What do we need?

Ingredients for layered chorizo ​​pan, beans and tortilla on a wooden table.
  • Large flour tortillas (Corn tortillas also work) – only need two.
  • Grated cheese – I use cheddar for the sauce and a mixture of cheddar and red luster on top
  • Finely chopped chorizo ​​and lots of finely chopped vegetables (I use hard / zucchini, carrots, onions and red pepper) For the sauceAlong with beans mixed in tomato or chili sauce, boxes of finely chopped tomatoes and a little spice.
  • Plenty of extras – Optional but I like my extras. I use coriander, avocado, red onion and sliced ​​chili.

Recipe for a tortilla chorizo ​​pan and beans

Instructions

  • Heat the oil in a large pan (use a pan that can be tucked under the grill), over medium heat.

  • Add in the onions and carrots. Cook for 5 minutes until the onion begins to soften.

  • Add in the chorizo ​​and fry for 3-4 minutes, until the chorizo ​​begins to release its oils.

  • Add the garlic, yellow / red pepper and zucchini. Stir and cook for 2 minutes.

  • Add the cumin, ground coriander, cinnamon and chili. Stir and cook for a minute.

  • Stir in the canned tomatoes, mixed beans, salt and pepper.

  • Bring to a boil and let simmer for 10 minutes.

  • Meanwhile, prepare the cheese sauce by mixing 50 grams of cheese, cream, salt, pepper and sour cream. It should have a thick, spreadable consistency.

  • Now it’s time to assemble the tortilla mold. Remove half of the chorizo-vegetable sauce from the pan, into a bowl.

  • Flatten the remaining sauce in the pan and place one tortilla on top of the sauce in the pan.

  • Spread half of the cheese sauce on top of the tortilla. Top the remaining chorizo-vegetable sauce from the bowl.

  • Place the second tortilla on top, the spread on the rest of the cheese sauce.

  • Sprinkle with the mixed cheese and place the pan on medium to high heat for a minute until the sauce begins to bubble at the edges.

  • Turn off the heat and place the pan under the grill (broiler) for 2-3 minutes until the cheese is melted and bubbling.

  • Remove from the grill and top with fresh coriander, sliced ​​chili, avocado, red onion and a drizzle of black pepper.

Make it vegetarian:
You can make it vegetarian by replacing the chorizo ​​with 200 grams (7 grams) of canned chickpeas, drained, washed and then mixed with 1 teaspoon of smoked paprika. Also use vegetarian cheese.
