This recipe is so simple and so good. Fresh coriander and a little sour citrus lime make plain rice fresh and interesting, and also beautiful!

If you enjoy food at Chipotle restaurants, this rice may sound familiar. This is a replica of their delicious rice (did you know they also have brown rice now?). This version probably has a lot less sodium, oil and fat than their version and is no less delicious. Much more economical to prepare yourself as well.

About this recipe

Any long grain white rice will work: jasmine rice, basmati rice, or plain long grain white rice. You can also make it with brown rice.

There are different methods of cooking rice: on the stove this is the method I use in this recipe, with a pot of rice, or in your instant pot. Use the cooking method you are most comfortable with.

what do you need

  • Long grain white rice: The recipe requires two cups of rice but it is easy to cross or double the recipe, depending on how much rice you need.
  • water: Use a ratio of 2 cups of water to 1 cup of rice.
  • Salt: Salt is needed to season the rice. Without it, the rice would taste bland.
  • Olive oil: Olive oil has a great taste and is healthy for the heart, but it’s okay to substitute another oil if you want.
  • Lime zest and lime juice: You will need two fresh limes. Using both grated and juice ensures that the rice will have an abundance of lime flavor. Scrape the lime before you cut them in half and squeeze the juice. It’s a lot easier that way, believe me.
  • Fresh coriander: Rinse this fresh herb well with cold water. Surprising how much dirt can stick to leaves and stems. Dry it in your salad spinner or with a clean lint-free cloth or paper towels.

Rice washing

Why wash rice before cooking? Washing long grain white rice removes excess starch that coats the dry grains. By removing some of the starch, the cooked rice will be less sticky or rubbery. Note: Enriched white rice may lose some of its additional nutrients by rinsing.

How to wash rice: Simply put the rice in a fine colander and pass cool water on it until the water clears, 1-3 minutes. Cook according to the instructions.

So in any method and type of rice you choose, bring the rice cooking.

Meanwhile, grate and juice the lime and chop fresh coriander. Do not worry about throwing in some stems as well as the leaves, as long as they are chopped quite finely.

Mix the lime zest, juice and coriander with olive oil in a small bowl. Sometimes I just mix them together straight in the serving bowl but then you have to make sure to bring everything up from the bottom of the bowl when adding the rice. You can also just add the mixture to the top of the rice and mix it in.

When the rice is done cooking, put it in the serving bowl and mix with the lime / coriander mixture. its not easy? If desired, garnish with more coriander or lime zest. Even a few rounds of coarsely ground black pepper is good!

What goes with coriander lime rice?

Coriander lime rice is very versatile. This is a great alternative to plain white rice and can dress up any meal.
Add coriander lime rice as a side dish with a Mexican meal. Its light flavors are the perfect foil for what can be a rich and spicy meal. Add it to your burrito, or to your burrito bowls. It’s great as a side dish with tacos or chili. Try serving coriander lime rice with chicken taco softness.
Coriander Lime Rice also goes great with stir-fries or chicken srircha instant honey pot. Serve this light meal with steamed broccoli and you have a delicious and balanced dinner.

What kind of rice is used in chipotle?

I can not say this with 100% certainty, but I believe that chipotle rice is basmati rice, long white rice. They also offer brown rice.

Make it yours

Because this is such a simple recipe with only a few ingredients, any change you make will quite dramatically affect the finished product.

  • Not a coriander lover? Chopped Italian flat leaf substitute parsley.
  • If you prefer, substitute Brown rice. It is more nutritious and has a nuttier and healthier taste. Keep in mind that cooking brown rice takes quite a bit longer.
  • No lime available? to use Lemons Instead. Obviously the taste will be slightly different but that’s not a bad thing.
  • Want to add protein? Prepare the rice with black bean Added. They add protein, nutrients, fiber and visual appeal.
  • It is easy To cross or double This recipe. Just maintain the same ratio of rice to water, and increase the rest of the ingredients accordingly.

Tips for storage and reheating

Refrigerate the rice residue in a well-covered container for Up to 4 days Or in the freezer for two months.

Reheat individual dishes in the microwave in a covered dish suitable for the microwave. You can also heat rice in a pan covered on the stove over medium-low heat. Frozen rice will thaw quickly when reheated, especially if it can be broken down into small cubes.

Instructions

  • Cook rice with 4 cups water, salt and 1 tbsp Oil, according to packaging instructions.

  • Lint rice with a fork; Transfer to a large bowl.

  • Add the rest 1 tbsp Oil, lime juice, lime zest and cilantro. Toss lightly until unified.

  • Serve immediately.

Remarks

  • Wash rice Before cooking, put it in a fine colander and pass cold water on it until the water clears, 2-3 minutes. Rinsing will reduce the stickiness but this step is optional.
  • Replace brown rice, cook it according to the packaging instructions.
  • 1 cup of raw rice makes 3 cups of cooked rice.
  • Immediate pot instructions: Add 2 cups rice, 2 cups water, 1 tablespoon oil and 2 teaspoons salt to an instant pot and mix. Secure lid. Aim for pressure cooking for 4 minutes. It will take 8 minutes to reach full pressure. After turning off the timer, let the pressure release naturally (i.e. leave the lid open and do not release the pressure) for another 10 minutes. Continue with the recipe according to the instructions.
