In my part of the world, strawberries are ready to be picked. This past weekend a local farmer had ripe and beautiful strawberries for sale. I bought a few liters and here are two recipes I made with these beauties.

Strawberry summer muffins

Component:

1 cup fresh sliced ​​strawberries, plus 15 strawberry halves
1/4 cup milk
1 teaspoon fresh lemon juice
1/2 teaspoon almond extract
1/4 cup butter at room temperature
1/2 cup granulated sugar
2 large eggs, room temperature
2 cups unbleached white flour
1 teaspoon baking powder
1/4 teaspoon salt
⅓ A slice of sliced ​​almonds

Preheat the oven to 350 degrees. Line a 12-cup muffin tin with cupcake lining; set aside. For this batter, I needed 15 cups so I used three cups in a second muffin tin.

In an electric mixer bowl equipped with the paddle connection, butter cream and sugar at medium-high speed until combined and apple. Reduce the speed to medium-low and add the eggs, beating only until a uniform mixture is obtained. Scrape the side and bottom of the bowl well halfway.

In a medium bowl, whisk together flour, baking powder and salt; Then add half of the flour mixture to the mixing bowl with the butter mixture, and beat just until a uniform mixture is obtained. Add in the milk, lemon juice, almond extract and the rest of the flour mixture, whisk just until a uniform mixture is obtained and scrape the sides of the bowl. Using a spatula, fold in the sliced ​​strawberries and almonds.

Add 1/4 cup of muffin batter to each cup of prepared muffins.
Top with half a strawberry.
Bake until the top is dry to the touch (about 22-25 minutes). Cool completely in a pan before removing to a serving plate.

Coating for waffle and strawberry pancakes

Component

2 cups sliced ​​strawberries
1 teaspoon fresh lemon juice
2 tablespoons maple syrup

directions

Place the ingredients in a small pot. Bring to a low boil. Lower the heat to low, partially cover the pan and cook for 30 minutes. Refrigerate until needed or freeze for a future meal.
