A Mexican favorite made by the Crocodile!

I love a good pottery meal and it is definitely not disappointing! Although I have an easy fajita chicken recipe that can be prepared on the stove or in the oven, but I thought it made sense to add pottery chicken pajitas to my arsenal of recipes. Not only is it a light “set it and forget it” dinner, it tastes just like the other versions. The only thing to watch out for is overcooking the peppers. If you are a little picky about maintaining the integrity of the peppers, I would suggest using the smaller chicken breasts, cutting the larger chicken breast into thinner pieces or adding the peppers later, during the last hour to an hour and a half of cooking time.
