Main Course:

Grilled salmon skewers with basil wine – Salmon cubes threaded on alternating skewers in lemon slices and served with basil vinaigrette! It just feels like the most essential summer dish right?

Hatched green chili ribs – The fastest way to my dad’s heart! When it comes to Father’s Dinner ideas, this or any other type of ribs are the ultimate dish!

Cornish chickens – My dad’s famous recipe for grilled corn chickens he prepares for us for special occasions! This is the perfect (but light) festive dinner at home!

Cedar board salmon – Cedar Plank Salmon is one of those super special meals that will taste like a billion dollars, but it really took almost no effort at all!

Father’s Dinner Ideas: Green Chili Ribs

These insanely green chili hat ribs make the perfect main course for Father’s Day dinner!

  • 2 Racks Baby back style ribs
  • 1/2 Goblet Of your favorite BBQ
  • 1 teaspoon Vegetable or olive oil
  • 1 Yellow onion, finely chopped
  • 1 Spoons We chopped chopped
  • 3 cloves Garlic, chopped
  • 1/2 teaspoon Ground cumin
  • 16 Ounces Hatch green chili (canned or thawed if bought frozen)
  • 1/2 Goblet White vinegar
  • 6 Spoons honey
  • 1 tablespoon ketchup
  • 1 tablespoon Dijon Mustard
  • 1/2 bundle coriander
  • Peel the crust from the ribs and place on a sheet or cutting board.

  • Preheat the oven to 350 degrees Celsius. Place ribs on a baking sheet and dry. Sprinkle freely with a dry scrub and process it into a meat by hand. Pour 1 cup of water into the baking pan and cover well with foil. Bake for two hours, until the meat almost falls off the bone

  • In a saucepan over medium heat, add oil, onion, gelatinio and garlic and cook for 5 minutes. Add cumin and cook for another 5 minutes. Place all the ingredients except the coriander in a fast blender and grind until smooth. Refrigerate until cool.

  • After cooling, add coriander and puree until a uniform and light green mixture is obtained.

  • After the ribs have cooked for two hours, remove from the oven and turn on the grill. Brush the ribs freely with barbecue sauce. When the grill is hot, cook them for 7-8 minutes on each side to get the pleasant charred taste. Remove from the grill and add more sauce if desired.
