These delicious oven-baked chips are on our menu at least a few times a month or more. I’m obsessed with French fries. I crave them all the time, and I love that I can get them with much less guilt than the deep-fried variety. They are my recommended choice for serving with classic beef burgers, elephant cheesecakes and countless other entrees.

Healthier homemade chips

I learned this clean and easy method of baking chips more than 20 years ago and since then I have not deep-fried a single potato in oil. These oven chips are very low in saturated fat and have less than 200 calories per serving! My sons grew up eating French fries made this way, and when you stop to think about all the fat and calories saved over all these years, it’s kind of a big deal. How time flies when you eat French fries!

Why not just use air fryer? Baking French fries in the oven allows you to fill a large baking pan with a sufficient amount of French fries to feed 4 to 6 people and cook them all in one serving. So even though I really like my air fryer, it has a much smaller capacity that will require cooking a second serving. I feed quite a number of people here and we are all French fries lovers to the end, so baking a large portion of French fries works best for me.

The best potatoes for baked chips

  • Dormant potatoes – Smurfs, also known as potatoes in Idaho, are large, stable in texture, and well crispy. They are a great choice for oven baked chips.

How to bake French fries in the oven

Potatoes sliced on a board, in a bowl, and on a baking sheet.
  1. Scrub the clean potatoes under running, cool water and then dry them with absorbent paper. Slice the potatoes into ½-inch slices and then cut the slices into matches of ¼ to ½ inches. Transfer the sliced potatoes to a large bowl. Add the olive oil and use your hands to toss the potatoes until well coated.
  2. Next, generously spray the baking paper with non-stick cooking spray and spread the oil-coated chips evenly. Bake the chips in an oven at 425 degrees Celsius for 40 to 45 minutes. After the first 20 minutes, use a spatula to toss the potatoes and then return them to the oven. Toss them again at least once or twice during the rest of the baking time.

I recommend using the well seasoned Baking paper with a frame When frying in the oven. Not black, just in good use. Darker baking paper will give more color and crispiness to everything you bake on it, so save those new and beautiful baking papers for your next batch of cookies.

Common questions

Should the chips be soaked in water?

Many recipes require soaking the sliced chips in cold water before cooking to help remove excess starch. This process should help prevent the chips from sticking during frying. I have never encountered this problem while frying potatoes in the oven, as long as they are well coated in oil and tossed with a spatula throughout the cooking time. Skipping this step means you can decide to add chips to your menu at any time with minimal preparation time. I have included in the recipe card optional instructions for soaking the potatoes in advance, if you would like to try.

What is the best temperature for baking French fries?

I tested chips in the oven at different temperatures and found that 425 degrees Fahrenheit is optimal. If you cook them at a higher temperature, they will most likely burn. Lower temperatures result in softer and less crispy chips.

How do you heat chips to make them crispy?

The fastest way to reheat cooked fries is in a toaster oven. It only takes a few minutes to roast them until they are warm and crispy. If you do not have an oven toaster, place the chips on a baking sheet and cook them in a conventional oven preheated to 425 degrees Celsius, stirring with a spatula after a few minutes, until they are warm and crispy.

Do I need to peel potatoes to make French fries?

No! In fact, there is great flavor and nutrition in these peels, so I always skip the time-consuming task of peeling potatoes when I make French fries.

Tips for the best baked chips

  • Do not overload the baking paper. It’s okay if some of the chips touch or overlap slightly because the potatoes will shrink slightly while cooking.
  • Do not mix the chips for the first 15 to 20 minutes of baking time. They will be crispy enough on one side after this initial baking time and will be firm enough to toss without breaking.
  • If you are feeding a large batch, double the recipe and use two baking sheets.
  • It is quite quick and easy to cut chips with a knife but you can save even more valuable time by using Cutter chips. For a crispy result, do not slice the potatoes more than half an inch thick.
