So when I checked (obsessed with making the best recipe for blueberry muffins), I started playing with other blueberry recipes. I had containers overflowing with blueberries so how could I not?

I originally planned to make a perfect blueberry crunch like our Marionberry version, but all the soft muffin pieces intrigued me. Here’s the thing, shoemakers often have an addition that is way too heavy and sometimes sticky and I just wouldn’t be a fan. After much testing I decided that a hybrid between a delicious crumble and an airy cake-like shoemaker’s icing is the way to go.

So yes, make it by cutting the butter but then a small amount of cream will be added along with baking powder to add the light and airy puffiness of a cake. It still crumbles over these amazing berries and in the end it is the most delicious Summer blueberry dessert.

Ingredients for blueberry shoemaker

How to make a blueberry shoemaker

One of the best things about a shoemaker is how easy It’s done! It’s just a simple filling topped with overnight baked into a beautiful golden coating. Here are the steps:

  1. Preheat the oven.
  2. Mix all the fillings together in a bowl.
  3. Pour the filling into two tart plates or a square baking pan.
  4. In a separate bowl mix all the dry ingredients.
  5. Add the butter and cream and cut the butter into the mixture.
  6. Use your hands to squeeze the coating until everything comes together into a ball by hand.
  7. Remove chunks from the batter and place on the filling.
  8. to bake.
  9. Sprinkle with cinnamon and sugar.
  10. Serve with ice cream if desired!

Can I use frozen fruit in Cobbers?

Yes, you can definitely use frozen fruit. This is useful when berries are out of season. Do not thaw the berries in advance. The filling will be more liquid and sweeping with frozen berries.

How to store and reheat blueberry shoemaker

The shoemaker should be stored in an airtight container in the refrigerator. It will be kept for 4-5 days.

To heat the cobbler, put it in the oven at 350 degrees for 15-20 minutes. If you only want to heat a single dish, you can just toss it in the microwave for 45 seconds.

Blueberry shoemaker variations

You can go wild with the filling for this recipe! Add raspberries, strawberries and / or blackberries to a mixed berry shoemaker. You can replace the berries with peaches or apples. If using peaches or apples, you can omit the flour from the filling.

Use the same amount listed in the recipe of any fruit you choose.

Why did my shoemaker leak?

You can almost always blame a liquid shoemaker for the fruit. Some fruits are simply juicier than others. If the filling looks particularly spicy when you mix all the filling ingredients together, add a tablespoon or less of cornstarch and whisk it in. This will help authorize it while baking.

What is the difference between a shoemaker, a crisp and a crumble?

I do not see the need to distinguish between the three because everyone does from me … always! But if you want to be technical, a shoemaker is usually covered in a coating on a sweet night. The crispy or crumble coating is usually based on oats.

Is it possible to freeze or make a shoemaker ahead of time?

There are two ways to freeze a shoemaker.

  • Freeze the filling: Mix all the fillings together and place in a baking pan and freeze for up to 3 months. When you are ready to prepare, put the frozen filling in the oven at 375 degrees for about 40 minutes and stir occasionally. Then prepare the coating and place on the filling and bake for another 20 minutes until golden.
  • Freeze the whole baked shoemaker: Prepare the entire shoemaker according to the instructions. Let it cool completely, then wrap in plastic wrap and then in foil. It will keep in the freezer for up to a month. When you are ready to eat it, reheat it in the oven at 350 degrees until it warms up. The coating will probably be slightly wet with this method.

Do not freeze the cobbler with an unbaked topping. It will not bake well.

  • Bake at 375 degrees for 30-45 minutes or until golden on top.

  • Sprinkle with cinnamon sugar.

  • Serve with ice cream.

You can use any fruit that is freshest, and for apples and peaches you can leave the flour in the filling.
For reheating: Place in the oven at 350 degrees for 15-20 minutes, or until hot.
