There is a dish called Baked Austin Beans. It’s a riff on baked beans in Boston with a Texas twist, hence the use of the capital city as an outline. Now, I’ve always loved the name, but the weird thing is that these baked beans are made from apples, and it’s peaches that I usually associate with that area of Texas.
Take Fredericksburg, a hill country town that is just over an hour’s drive. It is an area inhabited by German immigrants, and this culture still has a great influence on local cuisine, with sausages. . .
