How to make a crispy smoked peach

How to peel peaches

A fully ripe peach should be easy to peel using a slicing knife by grasping a small piece of the peel between the thumb and the knife and then pulling the peel from the fruit.

If the peaches are not really ripe, you will need to pour them by soaking them in boiling water for a few seconds and quickly transferring them to ice water to loosen the skin. The skin should then peel off easily.

If you use frozen peaches, add a few more minutes to the baking time or let them thaw first. So the baking time will be the same.

  • Spread the coating mixture over the fruit.

  • Replace the smoker to 350 degrees.

  • Bake for 30 minutes with the smoking lid closed or until done. Cool for about 10-15 minutes and serve with ice cream!

  • To peel peaches, start with completely ripe peaches. If they are not ripe at all, the only way to peel them is by soaking them in hot water and cooling in cold water.
