But nothing beats a classic like chocolate. We use it as a base to add cookies, berries and all sorts of goodies when we feel like something a little different. The possibilities are endless.

When making chocolate ice cream it is important to get a creamy chocolate base with the sugar and cocoa powder fully combined in the liver cream. You will want to stay by the stove and constantly whisk your chocolate base so that nothing burns.

How to make chocolate ice cream

To get rich cream ice cream not only do I use heavy cream, but whole milk is a must. Making ice cream is just not the place to cut calories.

While you are welcome to make it using 2% or even low-fat milk, whole milk provides the ceramics we love.

  • Cocoa powder in a Dutch process or a special dark cocoa
  • Sugar
  • Bitter or semi-sweet chocolate chips
  • milk
  • Vanilla extract

A recipe for chocolate ice cream

  1. In a large pot, mix the cream, cocoa, sugar and salt. Whisk to combine and then heat over medium heat, stirring constantly, until it comes together and begins to steam and cook. If you want, you can increase the heat, but continue to mix non-stop. Do not walk away at this point.
  2. Remove from the heat and immediately add the chocolate. Beat until the chocolate is completely melted. Stir in the milk and vanilla. Refrigerate and refrigerate for at least 4 hours or overnight until completely cooled.
  3. Work according to your machine’s instructions. Serve immediately for soft ice cream or transfer to a storage container suitable for a freezer and freeze until served.
