Chocolate cherry ice cream cake is a delicious and refreshing dessert that you can make on hot summer days. What could be more satisfying than serving a large slice of ice cream cake with friends or family.

This ice cream cake is quick and easy to make. It consists of moist and intense brownies with cherries at the bottom, vanilla ice cream without chorn with pieces of semi-sweet chocolate and served with fresh cherry colis. Since this is an ice cream cake, it is best to prepare it in advance, like the day before.

Since the cherries are in season now, I made this ice cream cake with fresh cherries, but feel free to replace the fruit with any other seasonal fruit you like best. Berries are also a good alternative to cherries.

Component

Cocoa Brownie

  • 2 Eggs
  • 2/3 Goblet (135 g) sugar
  • 1/2 Goblet (110 g) vegetable oil
  • 1 teaspoon (5 g) rum extract
  • 1/2 teaspoon (2 g) salt
  • 1/2 Goblet (60 g) unsweetened cocoa powder
  • 1/2 Goblet (60 g) flour for any purpose
  • 9 courage (250 g) Fresh cherries Pitted

vanilla ice cream

  • 2 Glasses (500 g) whipping cream
  • 12 courage (330 g) Sweetened condensed milk
  • 2 teaspoon (10 g) Vanilla extract
  • 1.5 courage Mini chocolate rocks

Cherry Collis, optional

  • 10 courage (300 g) cherries Fresh or frozen
  • 1/3 Goblet (70 g) sugar
  • 2 tablespoon (30 g) Lemon juice

  • Fresh cherries
  • Chocolate decorations

Instructions

Make the cocoa brownies.

  • Preheat the oven to 350 F (180C). Grease and line an 8-inch (20 cm) springform pan with baking paper.

  • In a bowl, beat eggs with sugar until well combined. Combine oil and rum extract. Sift the flour, salt and cocoa powder and whisk until completely incorporated.

  • Pour the batter into the prepared pan.

  • Add the pitted cherries on top and bake for 15-20 minutes until a toothpick inserted in the center comes clean or with a few moist crumbs attached.

  • Allow to cool completely.

Make the vanilla ice cream.

  • In a large bowl, whip cream until stiff peaks form. Stir in the sweetened condensed milk and vanilla extract until well blended. Fold in the mini chocolate rocks.

  • Transfer the cake to a serving plate.

  • Add a cake ring around the cake and line with an acetate sheet.

  • Pour the ice cream mixture over the cake. Slide the top. Freeze for 6 hours or overnight for complete stabilization.

Prepare the cherries to serve.

  • Place the cherries, sugar and lemon juice in a small pot and place over medium heat, bring to a boil and cook for about 5 minutes. Remove from the heat and grind with a blender.

  • Strain through a fine sieve and cool.

  • Before serving, decorate the cake with fresh cherries and chocolate decorations and serve with chocolates. have fun!
