The best cucumbers for making homemade pickles at home

The best cucumbers to use for homemade pickles are called cucumber kirby. Kirby’s are basically every little variety of cucumber that are small and grow especially for pickling. They are easy to find at any farmers market during the summer, or even at your local grocery store or Whole Foods may have them. These are the kind that will stay crispy after pickling. Since I developed this recipe before the cucumber season in early spring, I used Persian cucumbers that would be considered the next best thing.

Preservation in a water bath is not required

If you would like to make sturdy cucumbers on a shelf that you can store in your pantry for many years, I would 100% recommend preserving your pickle jars in a water bath. But since we make ‘pickles in the fridge’, we will not keep them in a water bath, because they will keep in the fridge for up to 3 months (or even longer).

Vinegar, flavorings and more!

I love the clean and crunchy taste of dill pickles with a hint of garlic, so that’s how I made these! Each component was used for some reason and I’m going to break it down for you:

  • White vinegar Gives a sharp and crunchy explosion.
  • Dill grass and garlic – For serious taste. Yum!
  • Kosher salt – I like salty pickles and am morally opposed to sweet pickles.
  • Sugar – To help balance salt and vinegar.
  • Black peppercorns and red pepper flakes Designed for low heat.

While I keep pretty basic stuff, here are a few more ingredients you can add to the recipe for homemade dill pickles to try: mustard seeds, jelpanius, dill seeds, fresh dill, yellow or sweet onions, coriander seeds and bay leaves.

How to keep homemade pickles crispy

There are a few tricks to ensure your pickles stay crisp.

Choose small, solid, fresh pickles

The freshest will be from your local farmers market, and you will usually find the little Kirby cucumbers there as well.

Cut off the flowering edge of the cucumbers

This eliminates the enzyme they contain and naturally softens the cucumber. This may be the most important step in getting the most crunchy pickles!

Salt cucumbers

If you have time, you should soak the sliced ​​cucumbers in a salt water mixture to soak up some of the moisture.

Add tannins

Another secret to making crispy pickles is to add to a jar of leaves that contain tannins, such as cherry, raspberry or grape leaves.

How to make homemade dill pickles

While the process for making homemade pickles is pretty straight forward, but it takes some time (at least 24 hours) since the cucumbers need to ‘pickle’. But the total active time is quite minimal.

Prepare jars

Rinse and dry liter jars. set aside.

Slice cucumbers

Wash cucumbers, cut edges and slice into quarters lengthwise. Add upright to the jars and over each of them a clove of crushed garlic. set aside.

Prepare the pickling liquid

Prepare the pickling liquid by combining dill, vinegar, water, salt, peppercorns, sugar and red pepper flakes in a small pot. Place over medium heat and stir until the salt and sugar are melted; About 2 minutes.

Remove from the heat and cool for 10 minutes. Pour over cucumbers, add lid and refrigerate for at least 24 hours.
