What makes it a California Club?
If you’ve ever come across a California Club on a restaurant menu, no matter if it’s a sandwich or a wrap, it will almost always include avocado. And instead of the classic combination of turkey, ham and bacon, they are often made with chicken (or turkey) and bacon, omitting the ham. Spinach tortillas add even more of a fresh California vibe to this delicious chicken bacon wrap.
Ingredient notes
- Bacon – cooked to a crisp. You can do this in the cooler morning hours, so you don’t have to turn on the oven later in the day.
- Avocados
- Fresh lemon juice
- mayonnaise – My favorite mayo right now is olive oil mayonnaise. Fat is healthier and very good!
- honey – adds just a hint of sweetness to the delicious chicken sauce.
- Onion powder and dried basil
- Sea salt and freshly ground black pepper
- Shredded rotisserie chicken breast – Kudos to the rotisserie chicken! May you always have value for money and availability! You can also use leftover cooked chicken.
- Spinach wraps – I use Mission Garden Spinach Wraps. This flavor is also available in a gluten-free version for a Gluten free wrap and a lower carb version. You can also use whole wheat tortillas or any of your favorite wraps.
- Green lettuce leaves – For the crisp, that crunch. You can substitute romaine lettuce if you like.

- Finely grated Monterey Jack cheese
Replace the shredded or chopped turkey and make it a California Turkey Club. A very tasty way to use up those holiday leftovers.
How to make California Club Wraps
This is a quick rundown of the steps for this recipe. You will find detailed instructions on the recipe card at the end of this post.
Prepare the ingredients
- Lightly mash the avocado with a little lemon juice and salt.
- For the chicken sauce, combine the mayonnaise, honey, onion powder, basil, lemon juice, salt and pepper.
- Add the chicken to the sauce mixture and stir to combine.
Assemble the wrappers
- Spread mashed avocado in the center of a spinach tortilla.
- Layer it with lettuce leaves and chopped tomato.
- Next, add a few slices of crisp, cooked bacon.
If your tortillas are cold, you should soften them in the microwave for just a few seconds before filling to make them more flexible and easier to roll.
- Top the bacon with some of the chicken mixture.
- Finally, sprinkle grated cheese on it.
- Roll up the wrap well and repeat the operation with the rest of the filling ingredients and the tortillas.
Tips for preparing a meal
To prevent the wraps from becoming soggy, it is best to assemble and serve them within a few hours. For lunch at work or school, assemble the California Club Wraps in the morning, wrap tightly in plastic wrap and store in the refrigerator until ready to eat.

- 8 Bacon strips
- 2 Avocados, pitted and peeled
- 2 tablespoon lemon juice, divided
- ½ teaspoon finely ground sea salt, divided
- ⅓ Goblet mayonnaise
- ½ teaspoon honey
- ¼ teaspoon onion powder
- ¼ teaspoon Dried dried basil
- Freshly ground black pepper, taste
- 3 cups Shredded rotisserie chicken breast, or leftover turkey
- 4 Large spinach wraps, Like Mission Garden Spinach Wraps (regular or gluten free)
- 4 or 5 green lettuce leaves, torn into large pieces
- 1 tomato, chopped
- 1 Goblet Grated Monterey Jack cheese
Instructions
Prepare the rest of the ingredients
In a small bowl, lightly mash the avocado with 1 tablespoon of lemon juice and a quarter teaspoon of salt. set aside.
In a medium bowl, combine the mayonnaise, honey, onion powder, basil, remaining 1 tablespoon lemon juice, remaining ¼ teaspoon salt and pepper to taste. Add the chicken and mix to combine.
Assemble the wrappers
Spread a quarter of the slightly mashed avocado in the center of one spinach tortilla. Layer it with a quarter of the lettuce leaves, a quarter of the tomato, 2 slices of bacon, a quarter of the chicken mixture and a quarter of the cheese. Fold one side over the filling and roll well. Repeat the operation with the rest of the filling ingredients and wrap.
Slice the wrappers in half and serve.
