Z-Zucchini! Do you have zucchini growing out of your ears in your garden? I sure do! There are so many recipes I find for zucchini! It’s crazy. Lots of zucchini brownies, chocolate zucchini cupcakes and of course zucchini bread. But today it’s all about stuffed zucchini! These are the bomb. Absolutely simple and low carb. I decided to use sausage and peppers and give this little mix to some zucchini for a tasty little meal. seriously. It was super delicious. And quite simple too 🙂

How to make stuffed zucchini boats

Preparation + preheating

Heat an oven. slice Squash in half and scoop out seeds with a spoon. sprinkle with salt and pepper and place with the meat side up in a 9×13 baking dish. Bake for 30 minutes.

Fry vegetables + sausage

While the zucchini is baking, heat Fat on medium heat in a large pan. fry Onion, pepper and sausage until brown. mix in Salt, pepper, basil, oregano and marinara sauce. Remove from the heat.

Can I use another sausage?

Definitely! If turkey sausage isn’t your thing or you don’t have it on hand, you can use chicken, pork, beef sausage…whatever you prefer will work for the filling.

After finishing baking the zucchini, fill Sausage and peppers mixture, top with Mozzarella cheese and return to the oven to bake. If you prefer a crispier zucchini, 10-15 minutes will be enough. If you want it softer, bake for 30 minutes.

Serve hot

Once the cheese has melted and the stuffed zucchini boats are as crunchy or as soft as you like, serve!

Sausage and Pepper Stuffed Zucchini Boats are a great low carb meal that is delicious and one of the best ways to eat zucchini! have fun!

Instructions

  • Preheat the oven to 350 degrees.

  • Slice the zucchini in half and remove the seeds. Place in a 9×13 pan and sprinkle with salt and pepper and bake for 30 minutes.
