You may have noticed that I have developed the habit of turning everything I can into ice cream. I’m a firm believer that ice cream can make almost any dessert better.

This obsession started with this creamy and delicious apple ice cream. It’s the most amazing cinnamon-sweet baked apples with a crunchy, buttery streusel topping folded into homemade ice cream.

My love for ice creams with all the goodness that comes with it comes from those times, like right before bed when I want something sweet. But eating a bowl of dessert with a scoop of ice cream on top is a bit much.

However, I feel a lot less guilty when I have a scoop of something like Peach Crisp Ice Cream. It’s all the goodness of the dessert full of fruit and ice cream combined and it satisfies that late night craving.

That is, if my boys didn’t find out and ran away with the ice cream in front of me. I am known to change which freezer and where I store it. I can’t share where this secret place is because they occasionally read this blog now.

Tips for making ice cream

Crispy peach ice cream recipe

  1. Whisk together the cream, milk, vanilla, sugar and salt. Pour into your ice cream maker and freeze according to the manufacturer’s instructions.
  2. While the ice cream is mixing, use a large spatula to transfer about half of the cold peach cracker to a cutting board. Coarsely chop the cobbler until all the pieces are bite-sized. You will need about 2 cups of peach crisp bites.
  3. When the ice cream has finished churning, transfer it to a 10-inch pan or a large airtight container. Layer half of the ice cream, then pieces of crisp on top of the ice cream, then repeat with the rest of the ice cream and crisp. Freeze until set.

This is an ice cream you need to plan ahead. First, you’ll want the peach crisp to be completely cold. In fact, we stored it in the fridge overnight before mixing it into the ice cream. Or put it in the freezer for a few hours to chill it.

This will help you avoid a melty mess. My impatience has gotten the best of me in the past and well you can imagine exactly what happened. (However, a thin serving of ice cream with a crunchy filling adds up to pretty awesome milkshakes. No one complains when that happens.)

Second, keep your peach pieces crisp and smaller than 1/2 inch in size. The fruits will freeze very firm in the ice cream, resulting in frozen chunks. Smaller pieces will help keep it creamy and scoopable.

Let the ice cream warm on the counter for 10-15 minutes before slicing, if it’s particularly firm when you’re ready to serve it.
