How long to soak chicken thighs?

Simple answer here… The longer the better 🙂 But seriously, give it a go At least two hours, that’s the minimum. The thighs are quite large so they really need some time for the flavors to penetrate the meat.

Ideally, you would let the meat sit in the marinade overnight in the fridge. It takes some planning, I’m aware of that, but it’s definitely worth it. I know people who marinate their meat for a full 24 hours or even longer and they would swear by it. Personally, I think it’s excessive for chicken meat, but to each his own 🙂

I like to Brown the chicken thighs on a tray before baking in the oven. It’s an extra step but it improves the final taste. Use the largest pan you have so it’s not too crowded, otherwise the thighs will stay steamy and not brown.

Brown the thighs on a large pan on both sides.

Give each side approx 3 or 4 minutes or until the thighs start to take on a brown color. Once you are there, transfer the thighs into a deep baking dish. Oh and don’t be upset if the meat looks a little charred, that’s because honey in our marinade. The dark color means the honey has caramelized and that’s fine.

There are a lot of flavors left in the pan and we definitely don’t want to leave them there. Add A small stick of butter and let it melt. drop in 5 cloves of garlic roughly chopped and sauté for a minute or two. And finally, add approx Half a cup of chicken stock and properly deglaze the pan.

Pour the sauce over the chicken thighs.

I mentioned that this dish comes with A side of potatoes We’re baking on the same plate, so let’s deal with it now. You will need approx 2 pounds of small yellow potatoes. If you only have large ones, just cut them into smaller pieces. Season the potatoes a little Olive oil, salt and freshly ground black pepper.

I use baby potatoes seasoned with olive oil, salt and pepper.

Add all the potatoes to the baking dish. Move them a little, they need to sit in spaces between the chicken thighs and should not cover the skin. This is a pretty important part if you want crispy skin on your thighs.

Cover the baking dish b aluminium foil And it went into the oven. Set the temperature to 400F or 200C and bake for 30 minutes. Then remove the foil and bake for Another 15 to 20 minutes or until the skin becomes crispy.
