Fresh horseradish
You can use fresh horseradish or prepared horseradish to make this horseradish sauce with mayo. If using fresh radish, be sure to grate it finely with a zester. If using prepared radish, be sure to drain the excess liquid before adding it to the mixture.

Aioli vs Mayo
Aioli and mayonnaise are not the same, however in our part of the world they are often used interchangeably. It’s likely that when you order something with “aioli” on it in the US, you’ll get a mayo-based sauce.
Classic aioli is an emulsion of olive oil and garlic, while mayo is an emulsion of egg, oil and acid (like lemon juice).

Tips for recipes
- For a mild horseradish sauce, stick to prepared horseradish as fresh is almost twice as spicy.

- Use fresh lemon juice, not bottled lemon juice. Bottled juice has a “packaged” taste compared to fresh and therefore will change the taste.
