You can use fresh horseradish or prepared horseradish to make this horseradish sauce with mayo. If using fresh radish, be sure to grate it finely with a zester. If using prepared radish, be sure to drain the excess liquid before adding it to the mixture.

Tips for recipes

  • For a mild horseradish sauce, stick to prepared horseradish as fresh is almost twice as spicy.
  • Since the mayo makes up the largest chunk of this horseradish aioli, don’t use a mayo that you don’t care about the taste of.
  • Use fresh lemon juice, not bottled lemon juice. Bottled juice has a “packaged” taste compared to fresh and therefore will change the taste.
