Garlic soup is one of mine Favorite soups Cook in the fall season and for good reason. This soup is very simple to make and almost impossible to spoil. All you need is a few very common ingredients and that’s about it 45 minutes of your time

Let’s start by finely chopping a A large yellow onion. If you want, you can also use white onions or even shallots… this garlic soup will taste great regardless of the type of onion we use.

Cut the onions thinly.

warm up a little Olive oil (vegetable oil is also fine) in a medium-sized pot and add the onions. While the onion is sautéing, we have some time for the potatoes.

Fry the onion in olive oil.

Again no science here, simple Peel and cut them into cubes. We’re going to cook the potatoes until they almost start to fall apart and then stir them in, so smaller pieces work better.

Cut 3 large potatoes into cubes.

As soon as the onions are turned translucent And the edges start to brown, it’s time to add our garlic. we need A whole head of garlic And you can crush the cloves or cut them into small pieces. We will stir the soup again, so don’t stress at all about the size of the garlic pieces.

Crush a head of garlic.

drop in two tablespoons of butter and sauté for another 3 minutes to extract flavors from the garlic. Add A teaspoon of dried thyme and fry again for another 2 or 3 minutes.

And now it’s time for the potatoes. Add them all to the pot. Mix them with the onion and garlic and sauté 3 more minutes once again.

Potatoes also go into the garlic soup.

Pour into 5 or 6 cups of chicken or vegetable stock. Alternatively, you can use just water and 2 stock cubes. Continue with A A cup of heavy cream And of course, generously seasoned salt and pepper. You’ll need about a teaspoon of each but it’s best to add less at first and add more later if needed.

Mix everything together properly with a spatula, cover the pot with a lid and cook over medium heat 15, or maybe 20 minutes. Once the potatoes are easy to break with a fork, we’re good and it’s time for the next step.

At this point, our garlic soup is almost done, we just have to take care of the “creamy” part. I’m sure you have a Manual blender at home so let’s use it now. We want to make sure that all the potatoes, onions and garlic are finely mixed and have There are no lumps left any.

It shouldn’t take more than 2 or 3 minutes and once we’re there, it’s time for a taste test. You will probably need to add some salt and black pepper, which I do as well. Mix everything again and cook for a A minute or two so that the salt has time to dissolve. Once you’re happy with the taste, we’re done.

And it’s time to serve. There are many ways to garnish this garlic soup and here are my two favorite ways. Homemade Bread croutons and finely chopped chives is a sure hit. But you can also use Grilled bacon piecesA nice amount of Cheddar cheese And again some chives up.

advice: Don’t have chives on hand? Finely chopped spring onion is an excellent substitute.

How to make bread croutons for soup?

It couldn’t be easier! Just take a slice of bread and cut it small cubes, about a quarter of an inch in size. Toast these pieces on a dry pan And once they become a little crispy, add a touch of olive oil or butter. Continue grilling until the croutons are browned.

you can too Season your croutons With garlic salt, pepper or some herbs… but they taste great even without additional spices. Bread croutons are my number one choice for this garlic soup, but they work great with many other soups or even salads.

Optional tips

  • You can experiment with aromatics for this garlic soup. I often add ground caraway or cumin. In the case of caraway, I would add 1 teaspoon and when using cumin, half a teaspoon will be enough.
  • The amount of garlic is also adjustable. Head 1 works great for this amount of soup, but definitely feel free to add more or less, depending on your preferences.
  • The garlic itself gives the soup a slightly spicy taste, But feel free to take it to the next level by adding some chili flakes or hot paprika.
  • Another great addition would be eggs. Simply beat two eggs with a whisk and stir them into the soup, just as you would make egg drop soup.
  • Want to use more herbs? go for it! Chopped parsley, marjoram, lovage, rosemary… all are excellent choices.

  • Pour in 5-6 cups of vegetable or chicken stock. You can also use water and 2 cubes of broth. Add a cup of heavy cream and season with salt and pepper. You’ll need about 1 teaspoon of both, but don’t add it all at once. You can always add more salt later, but you can’t really take salt out 🙂

  • Stir the soup, cover the pot with a lid and cook on medium for 15-20 minutes.

  • Once the potatoes are easy to break with a fork, it’s time to finish our garlic soup and make it creamy. Grab a hand blender and mix the soup properly until there are no lumps left.

  • Time for a taste test. You will probably need to add some salt and maybe a touch of black pepper. Cook for 2-3 minutes and our soup is finished.

  • Serve this garlic soup with bread croutons, chopped chives or spring onions, grilled bacon and cheddar cheese.
