We look forward to Thanksgiving dinner all year long. Not only do we eat the most delicious food, but we also get to spend time with friends and family. how could we No Be grateful for all this?! We see the turkey as the star of the meal, but you can’t ignore the sides and the sauce. Creamy mashed potatoes, crispy and tender green bean stew, sweet potato with marshmallow… and of course a healthy dose of sauce to pour over everything! Homemade turkey gravy is our favorite, and luckily it’s really easy to put together. There usually aren’t enough juices left in the roasting pan to make enough sauce, so all you have to do is rummage through your pantry for just a few ingredients before you’re ready to dive in. You are going to love it!

Soup Options:

You should be able to find turkey soup at your local supermarket. If you can’t, feel free to use chicken broth. You will add the broth to your turkey drippings to get the total amount needed.

What’s the trick to making the best sauce?

It all starts with these delicious turkey drippings. Use a small whisk to scrape it off the bottom of the pan, and use a little soup to help loosen any stuck bits. You will also need to decide whether or not to strain the drippings before adding the rest of the ingredients. We personally like to make an effort, as per the instructions in the video below. If you like to get little bits and pieces of your browned turkey, you can skip the draining step!

Butter substitute:

We highly recommend using real butter. If you are lactose intolerant or don’t consume dairy products, you can always substitute lard or a neutral flavored oil.

Flour substitute:

If you don’t consume gluten, you can substitute cornstarch sauce 1:1. Flour does hold up a little better in this recipe, but go with what works for your diet.

Can I freeze turkey gravy?

Yes! Once it has cooled completely, place it in an airtight container in the freezer, where it will keep for 4-6 months. To reheat, let it thaw overnight in the refrigerator and reheat it in the microwave according to the instructions below.

Storage and reheating instructions:

Store any leftover sauce in an airtight container—or in your sauce boat wrapped in plastic—in the refrigerator for up to four days. To reheat, place the sauce in the microwave and heat in 30 second increments. You can also heat on the stove in a pot over medium-low heat until warm.

Component

  • 1/4 Goblet butter (or your favorite neutral fat)
  • 1/4 Goblet All purpose flour (or 1/4 cup cornstarch)
  • 4 cups Poultry soup
  • Pan drippings From Turkey
  • 1 teaspoon Thyme Freshly chopped
  • 1 teaspoon parsley Freshly chopped
  • 1/2 teaspoon black pepper

Instructions

  • In a medium-sized pot, melt butter over medium-high heat.

  • Whisk in flour or cornstarch until a uniform mixture is obtained and no white spots remain. Let cook for 2 minutes.

  • Slowly pour soup and filtered pan drippings and beat well.

  • Bring to a boil and heat until it thickens to the desired consistency, about 2 minutes while whisking constantly.

  • Serve hot in a sauce boat.
