How to Store This Fudge Brownie Pie

This brownie pie will stay rich and crumbly for over a week if stored properly! By day 7 the crust is definitely starting to get a little soggy, but the filling of this rich brownie stays beautifully set for a magical time. We recommend storing this tightly covered in an airtight container in the fridge for best results! You can also freeze this pie for up to two months, as long as it’s stored in a plastic bag or freezer-safe container!

Component

  • 1 9-inch unbaked pie crust (homemade or store-bought will work!)
  • 3 Large eggs, room temperature
  • 1/4 cup Light brown sugar, packed
  • 1/4 cup Sugar
  • 1/2 cup Unsalted butter, melted
  • 2/3 cup Ghirardelli 60% dark chocolate chips
  • 2 teaspoons Vanilla extract
  • 1/3 cup All purpose flour
  • 1/3 cup Dutch processed cocoa powder
  • 1/2 tsp Salt

Instructions

  1. Heat the oven to 350 degrees Celsius.
  2. Place the pie dough on a well-floured surface and roll it into a large circle about 1/8 centimeter thick. Place your pie pan face down on top of the dough circle and use a sharp knife to cut a 2 inch wide border out of the pie pan.
  3. Roll the dough on the rolling pin until it is completely covered. Spread the dough on the dish, centering it. Roll the excess dough at the edges in and under towards the vessel, like a sleeping bag. Use your fingers to press down on the dough, sealing it to form a thick outer crust.
  4. Pinch the dough, making a “V” with two fingers of one hand on the outside of the pie dough and the index finger of the opposite hand to create a groove in the pie pan. Repeat the operation around the pie until the entire crust shrinks. Place in the freezer to chill while preparing the filling.
  5. In a large mixer bowl, beat the eggs and sugar until light and fluffy, about 3 minutes.
  6. In a separate microwave-safe bowl, melt the butter until it is hot, but not boiling, about 1 ½ minutes. Add the Ghirardelli 60% bitter chocolate chips to the butter and leave for a few minutes to melt the chocolate. Mix the chocolate and butter together until smooth and completely melted. If the chocolate chips don’t melt right away, you can put it in the microwave for another 30 seconds to heat the mixture.
  7. Add the chocolate mixture to the egg mixture and mix until a uniform mixture is obtained. Add the vanilla extract and mix well.
  8. Finally, add the flour and cocoa powder to the batter and use a rubber spatula to fold everything until you get a smooth mixture and no streaks of flour remain.
  9. Take the pie dough out of the freezer and pour the chocolate filling into it while smoothing it into an even layer.
  10. Bake at 350 degrees for 25 to 30 minutes, or until the crust is golden and the filling is set.
  11. Let the pie cool for an hour before putting it in the fridge to chill.
  12. After it has cooled, cut into slices and serve! have fun!
