What is Rocky Road?

Rocky Road is a chocolatey treat with marshmallows and a few other ingredients – often something crunchy like peanuts along with something jelly or chewy and often coconut is added as well.

Prepare it in a slice mold and cut into squares.

At least it’s Rocky Road here in Australia.

If you’re in the US, you probably think of Rocky Road as ice cream. Still with the same flavors but just in ice cream form.

But here, we are talking about Aussie Rocky Road!

Who invented Rocky Road?

The most popular version of Rocky Road’s history is that it is an Australian invention.

It is claimed that when sweets were melted on the long (and rocky) journey from Europe to Australia, traders in Australia would avoid throwing away these deformed sweets and instead use chocolate to fuse them together and mask their imperfections.

Rocky Road is born!

I should mention that there are other suggestions that the first Rocky Road appeared in the US.

But let’s not dwell on those.

The story above sounds more than understandable and we Austrians like to claim the best desserts like ours. Just ask any New Zealander about our favorite “Aussie” dessert, pavlova.

In 1935, popular Australian confectioner Darrell Lea introduced their version of Rocky Road, “Rokalia road“which certainly made this sweet an Australian favorite. They say “half a pound’s worth sells for two shillings. The main ingredients were roasted marshmallows and roasted peanuts, hand mixed with milk chocolate. Today Darrell Lee still makes Rocklea Road to that original recipe.”

I agree that Rocklea Road is incredibly tasty.

But why buy Rocky Road when you can make an even better version yourself so easily?

Rocky Road ingredients

For this basic Rocky Road recipe, the ingredients are:

  • Marshmallow
  • Ripe raspberries (or any raspberry-flavored lollipop)
  • Salted peanuts
  • Shredded coconut
  • Milk Chocolate.

These ingredients cover all those essential ingredients: the smoothness of the chocolate and the pillowy soft marshmallow with a little added crunch (peanuts and coconut) and chew (raspberry lolly).

How to make Rocky Road

To make Rocky Road, I like to cut the larger ingredients in half to make it easier to eat and ensure you get as many of these wonderful elements as possible in one piece.

So I cut the marshmallow and raspberry in half with kitchen scissors.

Then, mix together all the ingredients except the chocolate.

Melt the chocolate by putting it in the microwave for 20 second bursts and stirring between each burst until the chocolate melts.

Pour the chocolate over the ingredients in the bowl and mix until everything is completely covered in chocolate.

Pour the mixture into a slice pan lined with baking paper and slice to the edges, leveling the top with a metal spoon.

Put in the fridge to set.

After setting, cut into squares after setting.

Can you freeze Rocky Road?

Yes. Provided it is in an airtight container, it can be frozen for up to several months.

How long does Rocky Road keep in the fridge?

If you use this basic recipe, you can store Rocky Road in an airtight container in the refrigerator for several weeks.

Other versions will probably be stored for a similar amount of time as well, but it will depend on what plugins you used.

Of course, whether it actually lasts that long in your fridge is another matter entirely!

  • 280 gram Marshmallow
  • 170 gram Raspberry lolly
  • 1/3 Goblet Salted peanuts
  • 1/3 Goblet Shredded coconut
  • 360 gram Milk Chocolate
  • Prepare a slice mold (about 28 x 18 cm) by covering it with baking paper.

  • Chop the marshmallows and raspberry lollies in half and then add to the bowl along with the peanuts and coconut. Mix together to combine.

  • Melt chocolate by microwaving for 20 second bursts and stirring between each burst until the chocolate melts.

  • Pour chocolate over the ingredients in the bowl and mix until everything is completely covered in chocolate.

  • Pour the mixture into the mold and spread to the edges and flatten with a metal spoon.

  • Put in the fridge to set.

  • Cut into squares after setting.
