This is an easy meal to make during the week for your family.
These are cooked in the oven but can also be grilled

Black bean wrap, corn and salsa

1 tablespoon of oil
1 clove of garlic, chopped
1 small onion, finely chopped
1 small red pepper, cut into thin cubes
2 medium or 1 large carrot cut into thin cubes
1 cup corn, fresh or frozen
2 teaspoons of chili powder
½ teaspoon cumin
1 large tomato, diced
1 can of black beans, drained and washed
¼ cup tomato salsa
½ cup mozzarella cheese or Monterey Jack cheese, grated
½ cup sour cream
¼ cup fresh cilantro, chopped
6-8 inch flour tortillas
Salt and pepper to taste

Preheat oven to 350 degrees F.

Heat oil in a large pan over medium heat. Fry onion, garlic and red pepper until soft, about 6 minutes.

Add carrot and corn and steam until they are soft but crispy, about 3 minutes. Add chili powder and cumin. Mix for one minute. Add tomato cubes, beans, salsa and mix. Season with salt and pepper and remove from heat.

Place flat tortillas. Divide the bean mixture evenly between the tortillas. Spread cheese evenly on top of the tortillas and fold in half. Place on a tray and heat in the oven for 10 minutes.
Serve with sour cream, extra salsa and cilantro on the side.
