Bye 2022 and hello champagne jello shots! What better way to ring in the new year than with delicious (and dangerously easy to consume) champagne jello shots. Made with gelatin, lemon juice, sugar, champagne and vodka, these jello shots are perfect for celebrating any occasion!

What do you need to make Champagne Jello Fools?

The recipe for these Champagne Jello Shots couldn’t be easier and the ingredient list is super simple, so there’s really no excuse not to throw them together for your next festive event. Here’s what you’ll need:

  • Champagne: It wouldn’t be champagne jello shots without the bubbly! You can also use sparkling wine like prosecco or really anything else you have on hand!
  • Sugar: Champagne is quite dry and vodka is not exactly sweet, so I like to add. A little sugar to those to curb the alcohol taste!
  • lemon juice: A little lemon juice gives the champagne jello shots the perfect flavor with just a hint of juicy lemon!
  • Unflavored gelatin: This is an absolute must for those jello shots! Make sure you use unflavored plain gelatin for best results! Don’t be alarmed that it smells pretty bad when you open it – all those other flavors will offset it and all you’ll taste is sweet champagne, vodka and lemon!
  • vodka: In my opinion, jello shots should pack a bunch of booze, so I like to add vodka to it to make things extra fun, but if you prefer less jello shot, you can substitute it with water, more champagne, or even fruit juice if you want May they be a little sweeter!

Tips for making perfect jello shots

Gelatin is one of those magical ingredients that looks like nothing, but give it a few hours and it turns into something completely different! If you’ve never worked with gelatin before it can be a little stressful because you won’t see it set until it sets.

  • Make sure you use unflavored plain gelatin: Flavored gelatin will make these jello whips taste completely different and super sweet, so the recipe won’t turn out the same!
  • Do not let the mixture boil: Be careful not to let the jello mixture boil or you can mess with the jiggly gelatin!
  • Give your jello shots constantly to set: I hate waiting too, but it’s best to give your jello shots a full 3 hours in the fridge to set up completely. Otherwise, you might end up with soupy, not-quite-whipped jello that will turn into a big mess!

Component

  • 3 cups Champagne (or sparkling wine)
  • 1/2 Goblet Sugar
  • 1 tbsp lemon juice
  • 4 spoons (4 envelopes) unflavored gelatin
  • 1 Goblet vodka
  • Sprinkles, optional

Instructions

  1. Line an 8 x 8 mold with plastic wrap on all sides*. set aside.
  2. Combine the champagne, sugar and lemon in a heavy bottomed saucepan over medium-low heat. Mix with a whisk, cook until the sugar granules are completely dissolved.
  3. Add the gelatin and whip. Add in vodka and mix to combine. Do not let the mixture boil.
  4. Pour the mixture into the prepared pan and place in the refrigerator for at least 3 hours to set.
  5. If desired, put on top before slicing into 16 squares and serving!
