Bring this crowd-pleasing dish to picnics, dinner parties, barbecue parties and other gatherings with friends and family. Simple enough to make on a busy weekday – fancy enough to serve company! This simple spinach salad is loaded with fiber and includes quite a few colorful, healthy and nutrient-rich ingredients. They are all simple and can be easily found in most grocery stores making this salad a perfect choice for any day of the week all year round!

  • apples.I used 1 small red apple (Fuji, you can also use Gala or Honey Crisp) and 1 small green apple (Granny Smith). I did not peel the apples for presentation purposes.
  • Spinach Loaded with nutrients and antioxidants. It is rich in fiber and a good source of many vitamins and minerals. Spinach is an excellent source of vitamins A and C, as well as folic acid, iron and calcium. I used baby spinach.
  • dried cranberries. I used craisins – their sweetness goes well with an apple spinach salad. You can also use dried figs, blueberries or cherries. You can puff up the dried fruit by briefly blanching it with hot water.

This is a great salad to bring to picnics, barbeque parties and serve to a large crowd. In this case, you can double or triple the salad ingredients, and it may help to prepare some ingredients in advance. Here are my tips:

  • Toast the pecans in an oven preheated to 350 F for about 10 minutes. Cool them and store in a sealed plastic bag.
  • Prepare the salad dressing up to 3 days in advanceand store it refrigerated in a glass mason jar.
  • I do not recommend Prepare spinach or apples in advance as you can easily put them together the day of!
  • the assembly It should only be taken 10 minutes before serving for best results and freshness.
  • advice: Do not add the pecans, goat cheese, and salad dressing until just before serving to keep the apple spinach salad fresh and to keep the nuts from getting soggy.

Instructions

Prepare salad dressing

  • Mix all the salad dressing ingredients in a mason jar. Beat well with a fork until you get an emulsion. Add more lime juice to taste.

assembly

  • I prefer to arrange the salad in individual bowls for presentation purposes.
  • Add spinach to each individual salad bowl. Chop half of the nuts. Place the rest of the salad ingredients on the spinach.
  • Drizzle the dressing over the salad.
  • alternatively, you can combine all the salad ingredients (except pecans) in a large serving bowl, add the dressing and mix to combine. Then, top the salad with toasted pecan halves (some chopped).

Remarks

  • if used Raw pecans, toast them in an oven preheated to 350 degrees Celsius for about 5 or 10 minutes until their color is slightly darker and crispy. Be careful not to burn the nuts.
