What is Fagioli Pasta?
Pasta e Fagioli is a traditional Italian dish that means “pasta and beans”. It is made with simple ingredients such as pasta, beans and tomatoes, and sometimes a little meat or vegetables are added.
Different regions have different variations of pasta peggioli. It can be made with meat, but it is often made without. Some recipes include some pork, calamari or beef. It is traditionally very hearty, almost stew-like, and less soupy than the fajoli soups we often see in North America.
In this recipe, we make a similar version to the Olive Garden, with the addition of sausage and vegetables so it’s hearty enough to feed a family. But you can leave the meat out if you prefer!

The main difference between minestrone and pasta e fagioli is the variety of vegetables in minestrone. Fagioli is mostly pasta and beans with a little broth (I add some vegetables like celery and onion for extra flavor) while minestrone has more vegetables and usually more broth.
How to make Fagioli pasta
I make a lot of amazing soup recipes and this delicious one is at the top of our list! It’s easy, delicious, and hearty (and we think it’s even better than the Olive Garden Fagioli recipe)! It can be done without sausage, reduce the broth a little.
- Brown sausage and onion According to the recipe below. Add in the rest of the ingredients, except the pasta, and cook for 10-15 minutes.
- While the soup is cooking, cook the pasta in salted water until al dente.
- Mix the pasta into the bean mixture and serve.
Serve pasta fagioli soup alongside warm garlic bread and Caesar salad for the perfect meal.
Freezing Fagioli Pasta Soup
- Cool soup completely before packing for freezing.
- Add soup to pint or pint sized plastic freezer bags.
- Place bags flat in a single layer in the freezer, when frozen, stack bags to save space.
- Freeze for up to 3 months.

A recipe for pasta e fagioli soup
Pasta Fagioli Soup, also known as Pasta e Fagioli Soup, is hearty, comforting and delicious. And it’s ready in less than an hour!

In a large soup pot or Dutch oven, heat olive oil over medium heat. Add minced Italian sausage and cook without moving for about a minute. Crumble it with a wooden spoon and continue cooking until browned, 3-5 minutes. Filter the excess fat.

Move the cooked sausage to one side of the pot and add the onion and garlic to the other half and cook for 1-2 minutes, stirring occasionally, until the onion is soft.

Add chopped carrot, celery and diced tomatoes. Stir and cook until softened, 4-5 minutes.

Add basil, Italian seasoning, thyme, rosemary, tomato sauce, chicken broth and drained and washed beans. Season with half a teaspoon each of salt and pepper.

Bring to a boil, and lower the heat to a simmer. Cover and cook for 10-15 minutes or until the vegetables are soft. If needed, add more water, one cup at a time.

In a separate pot, add water and bring to a boil over medium-high heat. Season with salt. Cook pasta according to package instructions. Filter well and mix with a little olive oil. set aside.

Once the vegetables are soft, stir in the pasta until heated through.

Garnish with parsley and grated parmesan cheese if desired.
This soup can be made without meat if you prefer.
Store leftover soup in an airtight container in the refrigerator for up to 4-5 days. Heat on the stove or in the microwave.
