Cocoa brownies

  • 3 eggs
  • 1 Goblet (200 grams) of sugar
  • 1/2 teaspoon (2 grams) of salt
  • 3/4 Goblet (170 grams) vegetable oil
  • 1 teaspoon (5 grams) vanilla extract
  • 3/4 Goblet (90 grams) unsweetened cocoa powder
  • 3/4 Goblet (90 grams) all-purpose flour

Chocolate cream cheese frosting

  • 7 courage (200 g) semi-sweet chocolate
  • 1/2 Goblet (120 g) whipping cream
  • 9 courage (250 g) cream cheese room temperature
  • 1/3 Goblet (40 grams) powdered sugar
  • 1 teaspoon (5 grams) vanilla extract
  • 1 ¼ Goblet (300 g) whipping cream (35% fat) cooled

For decoration, optional

  • 3.5 courage (100 g) semi-sweet chocolate
  • 3.5 courage (100 grams) whipping cream
  • Fresh blueberries
  • Edible gold powder

Instructions

Prepare the cocoa brownie layers.

  • Preheat the oven to 350F (180C). Grease and line three 8-inch (20 cm) springform pans with parchment paper.

  • In a bowl, beat eggs with sugar and salt until a uniform mixture is obtained. Combine oil and vanilla extract.

  • Sift the flour and cocoa powder and beat until fully incorporated.

  • Divide the batter into the prepared molds.

  • Bake for 10-12 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs attached.

  • Allow to cool completely.

Prepare the chocolate cream cheese frosting.

  • Place chocolate and 1/2 cup (120 grams) of cream in a heatproof bowl and place over a pan of boiling water. Melt on low heat. Allow to cool to room temperature.

  • In a large bowl, mix cream cheese until smooth. Add powdered sugar and vanilla extract and mix to combine. Stir in melted chocolate.

  • Add whipping cream and mix until stiff peaks form.

Assemble the cake.

  • Place the first layer of the cake on a serving plate. Spread ⅓ of the chocolate coating.

  • Add the second layer of the cake and spread another ⅓ of the chocolate coating.

  • Top with the third layer of cake. Spread the rest of the frosting on the top and edges of the cake. Smooth the top and edges.

  • Refrigerate to set for at least two hours or even overnight.

  • Decorate the cake with chocolate ganache, fresh blueberries and edible gold powder. have fun!
