Using many of the ingredients found in my top-rated lasagna recipe, this soup is packed with ground beef, Italian sausage, crushed tomatoes, spinach, ricotta and Parmesan cheese, and topped with fresh basil. Lasagna soup is a perfect night soup for a warm stomach on a cold winter night! Serve with garlic bread and salad on the side!

But wait, what is lasagna soup?

Lasagna soup combines the ingredients of traditional lasagna and turns into a delicious soup, ready in half the time. Lasagna soup has pasta, ground meat or sausage (or both!), and cheese in a tomato-based soup, along with vegetables like onion and garlic, and often garnished with fresh basil or parsley.

What type of pasta is best for lasagna soup?

I used broken lasagna noodles for this recipe. You can use any type of pasta in lasagna soup, but some popular choices include Pasta from Falda (which look like perfect little lasagna noodles), small shells or broken lasagna noodles. Gluten-free pasta can also be used. Ultimately, the type of pasta you use is a matter of personal preference.

How to make lasagna soup

Brown the meat

Heat in a large pot over medium heat Olive oil. add Ground beef, Italian sausage, onion, red pepper flakes and Salt. Cook until the meat is browned.

Add the rest of the ingredients + cook

add garlic and Tomato paste and cook for 2 minutes. add Tomatoes, chicken broth, water, Italian seasoning, sugar, spinach and Pasta noodleswhile mixing to combine.

Lower the heat and cook until the pasta is soft, about 11-15 minutes. Do not overcook.

In a small bowl mix Ricotta, parmesan, salt and pepper together. Spoon into individual serving bowls. Decorate with a good sprinkling Olive oil and Fresh scent. Sprinkle more Parmesan cheese if you want

My soup came out really thick… what can I do to thin it out?

If your soup is too thick, this is a really easy fix. Simply add more chicken broth or water to reach the desired consistency.

Storing leftover lasagna soup

To store any leftover soup in the fridge, let the soup cool to room temperature, then place in an airtight container. Soup should stay fresh in the refrigerator for up to 3-4 days. If you feel that you will definitely have leftover lasagna soup, it is better to cook the pasta separately and add the desired amount to each bowl at the time of serving. This will ensure that the noodles do not overcook while you reheat and reheat. Again, this is entirely personal preference.

freeze, Let the soup cool to room temperature. Transfer soup to a container or a sealed, freezer-safe bag. Soup will stay fresh in the freezer for up to 3 months.
