To put this recipe together you will need the following basic ingredients to get started:

  • 1 medium loaf of cobs (about 500 grams)
  • A small onion
  • Olive oil
  • Cream cheese
  • Thickened cream (heavy cream)
  • Sour cream
  • Shredded cheese (a mixture of cheddar and pizza cheese works best)
  • White wine (preferably dry, but sometimes I use moscato which often tends to be open in my fridge and it works great).

For the Cheese and Bacon Cube Loaf, you’ll also need bacon shortening and fresh chives.

For the spinach and cheese cob loaf, you’ll also need frozen spinach and French onion soup mix.

For a cheese, ham and chives loaf, you will also need ham and fresh chives.

How to come up with this easy recipe for a cob loaf

Start by preheating the oven to 180°C (fan) or equivalent.

Using a large bread knife, slice the top off the cob loaf, about 4 cm from the top, and cut into pieces. These pieces of bread will be used to serve with the cob loaf – you will dip them in the cheese mixture.

After that, cut the center of the square – using the knife and then your hands Pull bread until you have a “bowl” of bread 1-2 cm thick.

Tear or roughly chop the inner bread into pieces.

Add these pieces of bread to pieces from the top of the cob loaf, place on a baking sheet and place in the preheated oven for about 10 minutes to toast.

Start making the dip – but time it so that you remember to take the pieces of bread out of the oven after they are toasted.

Prepare the dip by adding the olive oil to the pan and cooking the onion and the pork/bacon/spinach for a few minutes over medium heat.

Add the white wine and cook for 30 seconds.

Add sour and thickening creams (and French onion soup to the spinach and cheese loaf) and heat for a minute on low heat.

Add the cream cheese and 1 cup of the grated cheese and mix until the mixture is uniform.

Add 2/3 of the chives (for a loaf of ham or bacon) and mix.

Pour or ladle the mixture into your bread bowl.

Sprinkle the rest of the grated cheese and chives on top (for a ham or bacon loaf).

Put in the oven and bake for 15 minutes.

Serve with the toasted pieces of bread.

You can also add some other things like carrot and celery sticks that go well with the dip.
