A bowl of escarole, beans and sausage

3 tablespoons of olive oil
1 pound Italian sausage links, any type, cut on the diagonal into ¼-inch pieces
4 garlic cloves, chopped
Half an onion cut into cubes
3 (15 oz) cans cannellini beans, drained or 3 cups cooked dry beans {see recipe below}
1 teaspoon dried Italian seasoning
1 large head, chopped
1 cup chicken stock
salt to taste
1 teaspoon Calabrian chili paste
Fresh grated parmesan cheese

Wash the escarole well. Strain through a strainer until needed/

Heat the oil in a wide, wide saucepan over medium-high heat. Add the sausage and cook until browned all over, 12-15 minutes. Using a slotted spoon, transfer sausages to a plate and leave fat in the pot.

Lower the heat to medium-low, add onion and garlic and cook for 3 minutes.

Add the beans and their liquid, increase the heat to medium-high and add the chopped escarole. Cook until the vegetables are wilted and soft, about 15=10 minutes.

Add the brown sausages, chili paste, Italian seasoning and salt to taste. Lower the heat to medium-low and cook briefly. Serve with grated cheese and Italian bread.

How do I cook dry beans?

Component

8 ounces (1 cup) of dry beans
1 tablespoon chicken broth powder
1 small onion, cut in half
2 garlic cloves, lightly crushed
3 to 4 sprigs of fresh thyme or half a teaspoon dried
1 bay leaf
Half a teaspoon of kosher salt, or to taste

Place the beans in a large pot, add enough cool water to cover by 1½ inches, and soak overnight at room temperature. Discard any broken, discolored or floating beans.

Add the chowder, onion, garlic, thyme and bay leaf. Bring to a low boil over medium heat, then reduce heat to low. Boil the beans uncovered until they are just soft but not mushy, about an hour – they should keep their shape; Do not allow them to boil or they will be tough. In the middle of the cooking time, stir in the salt.
Remove the onion, thyme and bay leaf. Use the cooked beans and their liquid in your recipes.
