To make these chocolate chip cookies, you must first bake the boxed brownies according to package directions. (Keep in mind that the better the box mix, the better tasting these cookies will be. I used Ghirardelli boxed brownies because they are the best quality brownies in my grocery store.)

  1. After the brownies have cooled completely, cut them into small squares. Then you can start making the chocolate chip cookies!
  2. First, cream together the butter and sugar, making sure to use butter at room temperature for the best texture and flavor. Add in the egg and vanilla, then mix in the dry ingredients.
  3. Now comes the slightly complicated part: the cookie filling. To fill the cookies, you will first need to scoop 1 1/2 tablespoons of cookie dough and flatten it slightly in the palm of your hand. Next, take one of the brownie squares and make a disk out of it. Place the brownie disc on top of the flattened cookie dough, and then another piece of cookie dough on top of it. Carefully pinch the edges of the cookie dough and flatten the filled chocolate chip cookie as needed so that the middle is not also thick.

  • 1 Brownie mix in a box, baked according to package instructions (I used Ghirardelli Double Chocolate!)*
  • 3/4 Goblet Unsalted butter, softened
  • 1 Goblet Brown sugar
  • 1/4 Goblet Sugar

  • 2 tsp Vanilla extract
  • 2 cups All purpose flour
  • 2 tsp Corn starch
  • 1 teaspoon Baking soda powder
  • 1 teaspoon Salt
  • 1 Goblet Bitter chocolate chips

Instructions

  1. Bake brownie mixture according to package instructions in an 8×8 pan. Allow to cool, then cut into 25 squares (5 x 5 rows).
  2. Beat butter and sugars until light and fluffy, about 3 minutes. Add in the egg and vanilla, beat until combined. Mix dry ingredients and chocolate chips.
  3. Beat 1.5 tablespoons of the batter and flatten a little into a thick pancake (see photos for details). Take a brownie square and make a disk out of it, then place it on top of the cookie dough. Scoop another 1.5 tablespoons of batter, flatten a little and place on top of the brownie disk. Working between your hands, pinch the edges of the cookie dough together and flatten the entire ball of dough a little more so that it is about 3/4 inch thick in the center. Place on cookie sheets lined with parchment paper (you will need 2). Repeat the operation with the rest of the dough (you will have more brownies left to snack on!). Cover the trays with plastic wrap and place in the refrigerator for at least an hour, but up to overnight.
  4. Heat oven to 350 degrees Celsius. Bake cookies for 15 minutes. They will be slightly cooked, but will continue to cook as they cool. Allow to cool slightly before transferring to a cooling rack. Then eat all the cookies.
