Simple oatmeal muffins without dairy!

I like to keep muffins in the house for mornings when I’ve overslept and need to get out the door without breakfast. The delicious muffin, free of dairy products, is a perfect snack to grab and go on busy days.

Dairy Free Oatmeal Orange Muffins

I like to keep muffins in the house for mornings when I’ve overslept and need to get out the door without breakfast. The delicious muffin, free of dairy products, is a perfect snack to grab and go on busy days.

Makes 10-12 muffins

1 cup of orange juice
Egg 1
1/2 cup canola oil
1 cup large flaked rolled oats
1/2 cup brown sugar, packed
1 cup flour
1 teaspoon baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon orange zest (I used a micro plane)
1/2 cup raisins

Arrival instructions:

Preheat the oven to 350 degrees. Line a muffin tin with paper.

In a small bowl, mix the orange juice, the egg, the oil and the rolled oats and leave to soak while you prepare the dry ingredients.

In another bowl, mix the sugar, flour, baking powder, baking soda, salt, orange zest and raisins.

Add the dry ingredients to the wet ingredients and mix just until a uniform mixture is obtained.

Place in a prepared muffin tin and bake for 20 minutes, or until a tester comes out clean.
