I used my smoked corned beef but feel free to use any corned beef you made for St. Patrick’s Day!

I love corned beef hash! This is a great way to use up those pesky corned beef leftovers. This is a quick and easy weekend brunch (or breakfast for dinner!) that fills and warms the belly. This Irish dish is made with cooked corned beef, diced potatoes and onions. I just season it with a little salt, pepper and fresh parsley. This recipe is great on its own or with eggs and toast. I like my eggs runny, so cooking the eggs sunny side up in a separate pan is what I prefer. Alternatively, you can make some wells in the hash and crack the eggs right into the pan, then bake until the eggs are cooked to your preferred doneness You must.

Corned beef hash ingredients

Cook potatoes

Place Potatoes cut into cubes In a medium pot and cover with water. Bring to a boil and boil for about 10 minutes or until just softened. Drain the potatoes and set aside.

Dice potatoes in a large pot

Fry onions + potatoes

Heat a large cast iron pan over medium heat and add Fat and butter.

First, add Chopped onions and cook slowly until they start to caramelize, about 10 minutes.

Then, mix in Potatoes and cook until the potatoes begin to brown, stirring and turning occasionally. season with salt and pepper.

Add cubed corned beef

Finally, add Corned beef cut into cubes For the onions and potatoes, cook just until they are warm.

Serve hot + add a boiled egg

Remove from the heat, decorate with Chopped fresh parsley and serve hot with your favorite style of egg on top of each dish. Sunny side up, fried or poached eggs are all good options.

Alternatively, you can place some wells in the hash with the bottom of a small glass and crack the eggs right into the pan. Bake in the oven at 350 degrees Celsius until the desired doneness is achieved (10-20 minutes). I prefer a super runny yolk, so I like to cook them separately.

Store it in an airtight container in the refrigerator. Corned beef hash can last up to 4-5 days in the fridge

freeze: If you want to store corned beef hash for a longer period, you can freeze it. Place the cooled corned beef hash in an airtight container or freezer-safe Ziploc bag in the freezer for up to 3-4 months. Allow to thaw overnight in the refrigerator before reheating.
