Picture doesn’t look great, if you can imagine it as a chicken thigh with the skin on it nice and brown. You will have to trust me.

As you are reading this on Sunday morning or at least I am posting this on Sunday morning Friday night I was searching my site for this recipe. There were a handful of people at home getting ready for the baby shower for my son and daughter-in-law; My first grandfather the next day. The theme is horses so we are having a Jack and Jill BBQ. There’s still a lot of snow outside and it’s still cold so I don’t cook out there. I wanted to take some of the chicken thighs and marinate them in this recipe and the rest could be with barbecue sauce but I couldn’t find it on my website and I ran out of patience and time.

Couldn’t find it probably because I haven’t posted it yet, insert eye roll here. I thought so, I’ve made it a few times in the last month or so. You would think that I would share it with you because it is delicious but apparently I wanted to keep it all to myself. Yeah that’s not it, I’m pretty sure I’ve never taken a picture. So because I wanted to share this recipe with you, I’m going to take some chicken breasts (thighs all in BBQ sauce) that I have on hand, and make it today (Saturday) so I can take pictures for you. First update, shower went well, lots of people and some were here for breakfast so thought I’d write before they wake up. No; And then everyone left pretty early so I could finish it. No; My mother-in-law called and wanted to come for coffee. Then my son showed up with his dog that he lets run around outside doing his business. ok when they leave No; My son made another trip home with baby stuff and brought his wife back for breakfast. Oh, and I forgot to set the clocks forward so I’m way past finishing it. This is a glimpse into how my life goes on a regular basis.

Marinated chicken thighs

Declarable

A very tasty marinade that quickly connects to any weeknight meal

  • 8 chicken thighs
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ Goblet Olive oil
  • ¼ Goblet Low sodium soy sauce
  • ¼ Goblet Dijon Mustard
  • 2 spoons Maple syrup
  • 2 spoons Brown sugar
  • 2 cloves garlic ground

Marinade

  • In a large bowl, whisk together the olive oil, soy sauce, mustard, syrup, brown sugar and garlic. Or skip the bowl and pour everything into a zip loc bag. Add the chicken to the marinade in the bag for at least 10 minutes. If you can do an hour or even more I say make it happen.

  • When you are ready to bake. Heat the oven to 425 degrees Celsius. Remove the chicken from the marinade and place on a baking sheet lined with baking paper.

  • Bake for 20 minutes and then place the oven on broil to brown the top of the chicken and finish cooking. Remove from the oven and serve immediately.
