Aged Cheddar Cheese and Stilton Biscuits

Cheddar Stilton Cheese Biscuits


Cheddar and Stilton biscuits

Makes about 9 biscuits

2 ½ cups unbleached all-purpose flour
2 tablespoons of sugar
1 tablespoon baking powder
½ teaspoon of salt
1/2 cup chilled unsalted butter, cut into ½ pieces
1 cup (packaged) coarsely grated sharp cheddar cheese, chilled
½ cup coarsely crumbled Stilton cheese (about 2 ounces), chilled
1 ¼ cup chilled milk
1 large egg

Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.

Whisk the first 4 ingredients in a large bowl to combine well. Add butter and rub with your fingertips until the mixture resembles coarse meal.

Add the two cheeses; Rub with your fingertips until the cheeses are reduced to small pieces.

Mix milk and egg in a small bowl. Add to the flour mixture, mixing only until the dough is evenly moistened.

Using about 1/2 cup of dough, make about 9 biscuits. Depending on the size you may get more or less. Drop mounds onto each prepared sheet, 2 to 3 inches apart.

Bake biscuits for 25-30 minutes until golden, remove and serve.
