Coconut date oatmeal cookies

I’ve made these date coconut cookies a few times, and they never disappoint. They have a lovely caramel cinnamon flavor and…they are also nice crinkled on top of a bowl of yogurt!

Coconut date oatmeal cookies

Makes about 16 cookies

1 1/2 cups of pitted fresh dates, about 15, chopped
1/2 cup brown sugar
1/2 cup of butter
1 cup all purpose flour
1 cup of large, rolled oats
1/2 cup unsweetened coconut
1 teaspoon of baking soda
1 teaspoon of cinnamon
1/2 teaspoon of salt
Egg 1
1 teaspoon vanilla

Arrival instructions:

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Place brown sugar, butter and dates in a small pot. Place on medium-low heat and melt butter while stirring. After the butter has melted, continue to stir and cook until the dates are soft. You should use the back of the spoon to break up the dates. This should take about 7 minutes.

In another bowl, mix together the flour, oats, coconut, baking soda, cinnamon and salt.

In a small bowl, beat the egg a little and then add the vanilla.

Add the date mixture and the egg mixture to the flour mixture and mix until everything comes together.

Shape cookie dough into small bite-sized balls and place on the prepared baking sheet. Flatten them a little with your hands.

Bake for 12 to 14 minutes until the bottom is slightly golden.
