I’m not usually a fan of pineapple in my savory dishes – no, not even Hawaiian pizza. But this pineapple salmon recipe is something else! This is one of my favorite ways to enjoy salmon.

Ingredient notes

  • Salmon fillet– You can use fresh or frozen salmon fillets that have been thawed.
  • Olive oil– This is for coating the salmon so the rub will stick to it.

  • Fresh pineapple– You can also use canned pineapple slices if you didn’t get fresh.
  • Cherry tomatoes- I like to use cauliflower.

  • Use another rub- I used the Rub with Love Salmon Rub, but it’s done here in Seattle. But a great substitute for a locally made salmon rub it would be McCormick’s Sweet Citrus Rub and Salmon Spice.
