pig – You can use pre-cooked ham or leftovers, or even sausage links or bacon bits.

Potatoes – Cut the potatoes into bite-sized pieces or use a mixture of half potato and half sweet potato. Even important ones will work.

vegetables – Sweet peas are a classic addition, but you can also use other vegetables. Try green beans, carrots or diced tomatoes. Fresh broccoli, cauliflower or zucchini also work great.

cheese sauce – The sauce is delicious with butter, chicken broth and whole milk. I like ham with cheddar cheese but Monterey Jack, or a Mexican cheese blend work well too. If you prefer, heavy cream can replace the milk, or you can use a can of cream of mushroom soup instead.

Cheesy pork and potato casserole

Pork and Potato Casserole is a delicious and very simple dinner! Ham and potatoes smothered in homemade cheese sauce will be hard to resist!

  • Heat an oven to 400 degrees Celsius.

  • On medium heat, melt butter in a saucepan. Add the onion and stir until it softens, about 4 minutes. Add flour and cook another 2 while stirring.

  • Pour in chicken soup and milk gradually. Whisk on medium heat until a thick and bubbly mixture is obtained. Remove from heat and stir in cheese. Season with salt and pepper.

  • Place ½ of the potatoes in a 3-quart pan. Sprinkle with ham and peas. Top with the rest of the potatoes. Pour sauce over.

  • Cover with foil and bake for 45-50 minutes or until the potatoes are soft. Remove the foil (carefully, it will evaporate), top with the remaining cheese and bake for another 15-20 minutes or until the potatoes are soft and the cheese is lightly browned.

This stew will keep in an airtight container in the refrigerator for up to 4 days and will keep in the freezer for a month.
