It’s hard for me not to find a Mexican recipe that I like. Being from Texas, I always make it a point to eat Mexican food at least once or twice a week. I can never go too far without a good, spicy meal!

I’m especially in love with taquitos (often called rolled tacos). Not only are these Rice & Vegetable Taquitos vegetarian, they’re baked instead of the usual fried version you’ll find in restaurants. Easier and much healthier for you! This is the perfect dip recipe for my homemade salsa and guacamole. Trust me, you’ll want to make them again and again.

What ingredients do I need?

  • estimated. 20 small flour tortillas (You can always substitute with corn tortillas, if you prefer)
  • 1 15 oz can of black beans – drained
  • 1 15oz box of corn kernels – drained
  • ½ chopped red onion
  • 1 cup of preferred cooked rice (white, brown, etc.) – You can make the rice yourself, or use ready-made rice bought at the store.
  • 1 tablespoon cumin
  • 1 teaspoon garlic salt
  • 1 cup of grated mozzarella cheese
  • Favorite cooking spray (vegetable oil, olive oil, avocado oil, etc.)

How do I make rice and vegetable taquitos?

Start by preparing the rice, depending on the type you are using. I originally created this recipe using black rice. This gives a slightly nuttier and crunchier texture to the taquitos. But you can use any rice in this recipe. Once the rice is cooked, set aside for now.

In a large bowl, combine 1 15 oz of black beans, 1 15 oz of corn, ½ chopped red onion, cooked rice, 1 tablespoon cumin, 1 teaspoon garlic salt, and cheese. Mix the ingredients well and set aside.

To assemble, take one tortilla, a tablespoon of rice/vegetable mixture and roll carefully. Place the taquitos on a prepared baking sheet (with Teflon cooking spray). Once you’ve filled your baking sheet with tacos, spray the top of the tacos with additional cooking spray. This will help them become extra golden brown and crispy.
